7-- pieces of bark missing, looks over crowded, A little to saucy for my taste but didn't subtract for it

Score: 8 - Slices are a bit thick but are uniform, color looks okay, placement is good.

7 because I see the effort

7-8. Can't see the meat that good. Looks kind of saucy for a brisket entry.

9 I want this whole box to myself!!

Torn between an 8 or 9, but leaning towards an 8. Meat looks good, but placement doesn't. Burnt ends just thrown on top of slices, can hardly differentiate between slices and burnt ends.

Score 7. It doesn't appear that the cook took care to prepare this box. It appears that the ends of the brisket are torn and not trimmed, the slices could have been positioned in the box better, and the slices appear to be cut rather thick which would lead me to believe this brisket is over cooked.

I feel "dryness" and here's why - 2nd slice from the bottom, on the right is a "cubical shaped" piece of brisket - which is how the brisket would come apart if it was dry. The same type of "cube shaped seperation" is on the first slice. This could be an artifact of the picture.

M - You feel DRYNESS here? Good call. The Frostbuster judges feel the same way. While one judge said it was MOIST, three other judges complained of DRYNESS.

Wish our buddy Herb would have taken this shot from a slightly more frontal aspect so we could see the face of the slices better. From what I can see, this has a NICE color and looks very tender. It looks like the team caramelized some sauce on this and it does look inviting. BE's look fake but tasty.
I would very much like to sample this box

Scott A. - I don't really have a lot of time to have the box pose for me.

The Table Captain opens the box, I take a quick shot and then they turn to the first judge for the appearance score. Yep - that fast. ;-)

Score 8 The slices are a little thick and it might be over cooked.

7 - Bark looks great but that's really all you see. Slices look too thick and the right side ends are chopped off or torn looking.

Looks very appetizing... I would look forward to tasting this meat. I would score this meat a 9.

6 - Clean the box. slices too thick, looks like jelly on top. No POP , just a box of meat.

Doug KCBS - Master CBJ - CTC

Hard to see anything but the top of the slices from this angle. It looks like there is too much sauce in my opinion. Makes the box appear sloppy. Might be better to only have one row of burnt end chunks so there is more room for the slices to be displayed. I'd give this box a 7.

Like to have seen more of the sliced sides. Looks like the meat is sauced to a bit of excess maybe it's sugar carmelizing from his smoking process with a sugared rub. 8.. maybe 9 in person

BEs look great

7 - Rough looking box. Cleaner cuts needed. Layout works though just rough. Good looking bark

KCBS CBJ/COMP COOK
Has a nice color and sheen. Sauce a little spotty on the slices. Good looking burnt ends. Slices need to be spread a little more so it shows the meat. 8

FROSTBUSTER BBQ JUDGES "Appearance" Scores: 7,8,8,9,9,9

BBQ Critic and Frostbuster judges agree this box was looked DRY. For the Frostbuster judges, it tasted DRY. While some BBQ Critic judges complained the meat was a bit thick, Frostbuster judges were surprised the slices had good tenderness for being so thick.

    Purpose

The purpose of BBQ Critic's JudgeMyBox section is to provide feedback to competition cooks. Certified BBQ Judges who visit this site will score the photo of a contest box (using KCBS judging rules) and may optionally leave a comment explaining their score.

The idea is to allow the cook to get inside the mind of a judge (judges do have varying opinions) so they can use this information to help improve scores on APPEARANCE.

In turn, the BBQ Critic editorial team will provide feedback on some judge scores and commentary  that stray from the KCBS rules. This will help our judges become better judges and keeps everyone on the same page. Judges may also encounter some fun challenges at times (click for example).

Comments about boxes or judges scores may be discussed in our online FORUM in a respectful manner.

Please be mindful that scoring photo boxes may not be as accurate as scoring the box in person. Lighting, glare, angles, etc may affect the overall score. Judges also have more time to stare at your box, so that means we may get very detailed about the good and the bad.

Have fun, judges! Oh, and cooks? Please send us your boxes. We love to judge Q here at BBQ Critic. ;-)
