7 - Way too much sauce.

7 to 8 heavy sauce

Larry MCBJ

7 - not centered in box and appears very over sauced. Pass the paper towels.

This box is an 8 just because the peices are over sauced, and dark. The peices are not even. As a judge when you pick up oversauced chicken, it is very messy, and you get a lot of parsley stuck to the piece.

David - CBJ- KCBS

Score - 8..Glaze appears to have been applied way too thick. Good uniformity in the box.

Comments - maybe a lighter color next time. For whatever reasons, I have seen that when chicken is darker, the glaze tends to look thicker for whatever reason.

7 - over glazed. glaze a little dark.

9... Good color. Almost equal in size.

Way over sauced. Lighten up.

score reason 8 consistant sauce but appears heavy to me. the chicken sizes and looks appear consistant just the sauce amount

8 - sauce looks a little thick and color a little dark, but maybe that's the pic.

Over sauced, too dark Garnish uneven

Score/Reasons = 7, the thighs are not the same size, the lower right and the center left thighs are obviously not the same size as the other thighs.
The the thighs are very, very over sauced making the meat unappetizing to me.

Suggestions/Comments = Ensure the thighs are close to the same size. Using less sauce is better.

an 8. Good layout, even spacing. Even color, look moist. But lower right piece is smaller.

Dan KCBS CTC, MCBJ

8 nice size and trim just to much sauce

Doug KCBS MCBJ & CTC
10/26/2013 12:47:21 pm

Score = 7: The sauce is way too heavy on these thighs. Remember it is a meat competition not a sauce competition.

Comments: When I score an entry it is all about balance. Does the sauce compliment the meat or does it overwhelm it? In this case it overwhelms the chicken. Most judges I have spoken with dislike heavily sauced chicken. Keep that in mind in saucing your chicken or any other meat.

Ike, KCBS CBJ

7.

Way too much sauce. Pieces aren't very close in size.

Dick-MCBJ/CTC
10/27/2013 06:10:27 am

Score 7. Due to the heavy covering of overly thick sauce on this chicken I really wanted to score it a eight, but would like to think the cook needs to realize that we judge the meat. When the judges cannot see the meat, due to overly sauced meat with heavy/thick sauce their score will suffer.

7 maybe 8 in person good color but very heavy on sauce

10/27/2013 09:45:36 am

I give this a 7. The box is neat. But the sauce is just over board.

John - KCBS / MCBJ, CTC, Rep; MBN & MIM Judge

Score/Reasons: 7 - Thick, gloppy sauce obscures the meat. Very irregular sizes piece-to-piece, from rather large in left rear to small in right front.

Suggestions/Comments: Trim your pieces to be of relatively equal size and please lighten up on the thick gloppy sauce.

I would score this box a 9.

Suggestion: Try to use less sauce.

7 - Very dark and heavy sauce, too much sauce. Can't see the chicken.

DJ Martin KCBS CBJ

score/reasons = 8
Nice looking, decent color, just too much sauce after the cook.

Steve R - KCBS CBJ
10/28/2013 01:52:33 am

Scored a 7: Meat looks good, uniform size pieces, arranged nicely, but way too much sauce used.
Side note: Just the right amount of garnish for the size meat - you can see it, but it's not "overpowering" the chicken in the box.

GregG KCBS/MCBJ
10/28/2013 04:58:07 am

8 - Sauce appears to be heavily applied, but may just be the photo.
Otherwise would have given a 9.

Moonpie
10/28/2013 05:18:39 am

9. No question. 9.

Comment. I know some judges who would count off for being too dark and from the picture perhaps too much sauce. But in my opinion this is definitely excellent presentation and deserves a 9.

Deb KCBS MCBJ/CTC
10/29/2013 02:09:29 am

Score/Reasons: 8 Sauce is WAY too heavy on this entry. It could have been a '9' if the cook had used a lighter touch.
Suggestions/Comments: This is one of those "less is more" situations. It's a meat contest, not a sauce contest. I have to believe that it would be very difficult to taste the meat for all the sauce painted on these thighs.

    Purpose

The purpose of BBQ Critic's JudgeMyBox section is to provide feedback to competition cooks. Certified BBQ Judges who visit this site will score the photo of a contest box (using KCBS judging rules) and may optionally leave a comment explaining their score.

The idea is to allow the cook to get inside the mind of a judge (judges do have varying opinions) so they can use this information to help improve scores on APPEARANCE.

In turn, the BBQ Critic editorial team will provide feedback on some judge scores and commentary  that stray from the KCBS rules. This will help our judges become better judges and keeps everyone on the same page. Judges may also encounter some fun challenges at times (click for example).

Comments about boxes or judges scores may be discussed in our online FORUM in a respectful manner.

Please be mindful that scoring photo boxes may not be as accurate as scoring the box in person. Lighting, glare, angles, etc may affect the overall score. Judges also have more time to stare at your box, so that means we may get very detailed about the good and the bad.

Have fun, judges! Oh, and cooks? Please send us your boxes. We love to judge Q here at BBQ Critic. ;-)
