I'd give it an 8.

Looks a bit messy...I don;t like the strings layer out like that...looks handled too much

eight---nice no garnish presentation

Buzz - Correct! No GARNISH is great because it does not distract judges from judging MEAT ONLY. Love it! ;-)

8 maybe 9
Oh the horror. This poor team is gonna get docked by some judges for actually having the temerity to present BBQ meat with fat on it. There it is on the front slice. Well good for them. I wish we saw a lot more fat.
Never a fan of the pulled strips. I'd rather have completely pulled or chopped or chunks
Nice bark, great smoke ring. I want one of those slices. This stuff looks real, not fake.
Why can't we get brisket like this?

BBQ Critic
3/1/2012 02:38:53 pm

Scott - The SMOKE RING has no bearing on scoring this box. I know you know this. Please place any mention of this under SUGGESTIONS OR ADDITIONAL COMMENTS. Thanks! :-)

That looks like some real tasty pork! Nice bark, and it looks moist from where I'm sitting. The loose meat on the left detracts from the uniformity of the slices, or I would have gone with a low nine. I'd say you have a solid eight there.

Love it.... lets do away with garnish

I'm so easy.. but this is only an appearance score.. not a dryness,
How do some of you know bark will be burnt using your eye's.. You haven't experienced the miracle of a 3 hour cooler rest!

Elksie - BBQ Critic agrees with your comment: "Lets do away with garnish."

7.. maybe an 8 in person. Just no Wow factor it's a bit above average.

Appears that little time was put into the design of the presentation.
Slices, Pulled and Chopped is always nice. Just remember we're obligated to test each type. Ensure there's enough for all 6 judges for each type.

BBQ Critic
3/1/2012 02:48:49 pm

Splat - Good suggestion to make to the cook (that each type of meat is there for all 6 judges).

However, be mindful that if there is not enough of each type of meat to go around, judge what you do get and judge it fairly as the taste & tenderness may still be worthy of a 9.

COOKS - this can be instant death in a contest. Do make sure you have enough of all types of meats in the box for all 6 judges. Or you piss off some judges who take it out on your score . ;-)

very messy and unorganized, pork looks moist but its too busy. The slices look thick and I see fat on the first piece

9 - Looks great!!

7 over all appearance is appetizing.

The slices look really good, But the pull/chop, not so much.

I think bigger plugs would be more appetizing than the stringy looking strands you presented. I also think that doing something to separate the pulled from the chop would improve the overall look, perhaps separating by a space or something like that.

NOTE TO ADMIN: In the case of this entry, it might be helpful to the cook if we were to let him know that garnish would improve his scores in a KCBS contest. He may already be aware of this, but none of us know that. While I see your logic in judging only the meat, it is one thing to judge garnish, and quite another to suggest it in order to help the cook.

Please feel free to delete this comment if you need to.

Tim,

If you are going to bring up GARNISH because you think it is going to improve a score, then simply follow this format as outlined at the top of this page when judging:

====================

SCORE/REASONS FOR SCORE: Score this entry and give reasons for your score. DO NOT judge (or mention) garnish or smoke rings in your reasons for scoring unless in interferes with the judging process in some way such as covering up the meat too much so we cannot see the meat. We judge meat only.

SUGGESTIONS: Feel free to offer any suggestions on how to improve the box (keep separate from reasons why you scored the box). You can mention anything here such as garnish suggestions.

====================

As long as you are not judging the garnish as part of your REASON, you are fine. We judge meat only. There is nothing wrong with suggesting to the cook they need to keep their garnish attractive or have it present in a box if that is how you feel - and think it would benefit them because of how other judges might view the box. Feel free to make what ever suggestions you want. Just keep your SUGGESTIONS separate from you REASON for scoring the box.

FYI: This this box was in a SCBA contest - not KCBS. :-)

overcrowded box. One of the 1st things I look at in judging appearance is the edges. They should be clean and neat in my opinion. Try to make the edges straight.

6-- below average..... stray unattractive random pieces on left side, I hate ugly stringy pieces / look like sauce poured on directly. Not sure there is enough pulled on back right for 6 judges?

9! All the way! My first response was that I want some of that now! I also applaud the fact of a good portion of slices and pulled pork.

Not judging garnish, but I like the fact that there is none. The meat is the star and is presented well.

Dick - CBJ

Score 7. Even though the meat does look great the box looks sloopy and clutter. I would place slightly less meat into the box and add the garnish to add some contrast and color.

Dick - GARNISH (present or not) has no bearing on the scoring of this box. We judge MEAT ONLY. ;-)

Way Way Way to much meat. Looks like a box of takeout. Cut back on the meat and even a little garnish would help here. I do have to say you have a nice smoke ring on your slices.

BBQ Critic

Kev - GARNISH has no bearing on the presentation of this box since we do not judge it. We also DO NOT judge the SMOKE RING as it can be artifcially created. I'm positive you already know this, so I am not sure why you made this a part of your score of 6???

Score 8 - Very nice looking box, excellent bark on the money muscle, pulled pork looks juicy with good bark, placement in box is a bit messy with smaller pieces on the left that I took a point off for.

I love it!!! If this one looked just a tad more moist it would be a solid 9. As it is (from the pic) it gets an 8 for sure, possible 9.

I would give this an 8, MEAT looks great, love the full box with different selections of pork; bark looks good, it just doesn't scream a 9, the box needs to be cleaned up a little, just looks a little messy.

    Purpose

The purpose of BBQ Critic's JudgeMyBox section is to provide feedback to competition cooks. Certified BBQ Judges who visit this site will score the photo of a contest box (using KCBS judging rules) and may optionally leave a comment explaining their score.

The idea is to allow the cook to get inside the mind of a judge (judges do have varying opinions) so they can use this information to help improve scores on APPEARANCE.

In turn, the BBQ Critic editorial team will provide feedback on some judge scores and commentary  that stray from the KCBS rules. This will help our judges become better judges and keeps everyone on the same page. Judges may also encounter some fun challenges at times (click for example).

Comments about boxes or judges scores may be discussed in our online FORUM in a respectful manner.

Please be mindful that scoring photo boxes may not be as accurate as scoring the box in person. Lighting, glare, angles, etc may affect the overall score. Judges also have more time to stare at your box, so that means we may get very detailed about the good and the bad.

Have fun, judges! Oh, and cooks? Please send us your boxes. We love to judge Q here at BBQ Critic. ;-)
