BBQ CRITIC APPROVED - MARLOWE'S BBQ SAUCE & DRY RUB (2024)

I am honored to announce Marlowe's Ribs & Restaurant (Memphis, TN) will be the first BBQ restaurant business to print the BBQ CRITIC APPROVED seal on their rub and sauce labels, and inside their food menu.

In the winter of 2023, I inducted Marlowe's Ribs & Restaurant in to the BBQ CRITIC "HALL OF FAME." I made the trip to Memphis to hand out the award.

​Letetia "Tish" Henley Kirk, Elvis Presley's private nurse who lived at Graceland with Elvis for 9 years, graciously helped me hand out the plaque. The full story will come out (along with other inductees) when I introduce the new HALL OF FAME section on the BBQ CRITIC website.

I spent a lot of time with Letetia driving around Memphis and talking with her about Elvis. An absolutely fascinating experience I will cherish forever. You can read about her stories in her books below. Click on the image below to order.

When leaving Memphis, Missy and Michael Coleman II (the owners), sent me home with a complimentary bottle of Marlowe's BBQ Sauce and Marlowe's Dry Rub. Missy created the sauce and has refined it over the years. 

​When I got home, I went through the container of rub quite quickly after trying it on everything including veggies, meats, and even popcorn. I bought more online and not long after I conducted the Official Test Cook with both the rub and sauce.

WET RIBS (THE SAUCE)

So I took a slab of ribs and rubbed it up with their Dry Rub and smoked it to perfect tenderness in my GMG Trek Prime.  Then I finally opened the bottle of sauce. When I add sauce to ribs, I prefer to brush it on the rack of ribs and cook an additional 10 min or so. This will caramelize it to a delicious stickiness that makes me want to lick my fingers with each and every bite from a rib bone. 

The sauce is not overly sweet which is refreshing to me as a Master BBQ Judge. OVERLY SWEET dominates in competitions. Marlowe's BBQ Sauce is a semi-sweet sauce that hits your tongue with a tangy kick and a smokey, rich flavor from their secret blend of spices. Very enjoyable. A very successful cook.

DRY RIBS (DRY RUB)

This combination of rub and sauce naturally paired well, but my favorite way to eat ribs is without sauce. Well, actually, I sometimes like to order my ribs half dry and half wet (when available). I like the variety of flavors from each.

When I make a dry rib, I mix together a watered down version of the sauce and mop on a VERY THIN layer to the meat. This helps bind the rub to the meat and enhances the flavor of the dry rub. When I pull it off the smoker, I add an additional layer of rub for a final touch. BAM!

Marlowe's Dry Rub is a delicious Memphis rub. A very earthy balance of sweet & savory with a little heat. The more I used this rub, the more I fell in love with it. Dry rub ribs are so delicious and this Memphis dry rub nailed it.

Oh, and I must mention my shrimp experience at Marlowe's.

​Missy was bringing me some samples of food to try from their kitchen. She set in front of me a ceramic boat of shrimp seasoned with Marlowe's Dry Rub. I warned Missy I am NOT a shrimp fan, but I would try it. By the end of the dinner, I kept picking away at that shrimp until it was all gone. I can now add this to my list as one of the ways I can actually enjoy eating shrimp.

Guy Fieri summed this rub up best while filming his DINERS, DRIVEINS AND DIVES  Food Network show at Marlowe's.  While digging into a rack of ribs fresh out of the smoker, he said, "Pulled off the bone nicely. That dry rub is fantastic!"

During the publishing of this review it just happens to be ELVIS WEEK in Memphis, TN. If you are in Memphis during this time, stop on out at Marlowe's Ribs and Restaurant.
