8 Box could be neater for presentation.

Dan KCBS CTC,MCBJ

8 looks unusually reddish but the burnt ends look normal

Bill F

7 Good potential but the color is off and sauce a bit heavy. There seems to be too much contrast between the slices and ends.

Rod
5/6/2013 02:57:51 pm

8 sauce looks a little too thick for my liking, looks real nice other than that.

Ike, CBJ/KCBS
5/6/2013 03:10:38 pm

7, possibly 8 in person. Burnt ends and brisket don't look like they came from the same chunk of meat. Also too much sauce.

Frank KCBS MCBJ CTC
5/6/2013 03:35:57 pm

Score/Reason - 8. Sauce needs to be a bit more even. Burnt ends appear a little dry in places.

Suggestions/Comments - Nicely arranged. Cut the burnt ends a bit more even.

Kendall - CBJ
5/6/2013 03:40:58 pm

I'd give it an 8. The sauce doesn't look evenly applied.

Dick-MCBJ/CTC
5/6/2013 03:47:08 pm

Score 8. Reason: There appears to be a lot of sauce on this meat and even appears to be pooling between the slices. I also don't care for the very dark burnt ends and they appear to be overcooked. Suggestions. I would lighten up on the sauce, lighten up on the burnt ends and maybe mix them up (lighter and dark mixed) and better use the garnish to frame and improve the meat.

9 - Looks delicious. Slices look moist. Burnt ends look good.

8- i would like to see a little more color (char) on the bark and the burnt ends look a little dry but other than that, it looks good.

Score/Reasons = 7.5 meat does not look natural. Ends brisket look ragged, not cut cleanly. burnt ends look good but dry.

Suggestions/Comments = too much sauce on meat, yield odd coloration.

Greg MCBJ/KCBS

score=7
colors different from slices to burnt ends. A little more effort would have made a prettier box.

Shawn Surber- KCBS CBJ and Comp Cook

Score/Reason: I would score this box a 9. Great color and great looking box all around.

Suggestions: You may want to put in a few more burnt ends if you have them to fill up the box.

Ed KCBS MCBJ

Pretty nice looking box. Color of your finishing sauce is a little disturbing (tomato?). The left ends of the slices are ragged and uneven.
Congratulations on presenting true Burnt Ends not square pieces brisket point. They are 9's all day long, however the slices bring it down to a very good 8.

Sugg.
Make sure every bit of you meat has sauce on it, the dry left front slice is part of what cost you a point.

Deb KCBS MCBJ/CTC
5/7/2013 02:54:27 am

Score/Reason: 7, over-sauced brisket- appears overcooked.

Suggestions/Comments: Not a fan of sauce on brisket at all; would prefer that the meat be allowed to stand on its own qualities.

Doug KCBS MCBJ & CTC

Score = 8, sauce is uneven.

Comment: If you feel the need to use sauce, then make sure each slice is evenly coated. Good brisket does not need sauce.

9 Very good looking box.

Chaz D KCBS CBJ
5/7/2013 06:04:46 am

Score 8: Had to drop a point for the uneven saucing. The meat is trimmed the way I like, not all squared off like it came from a can. Doing the curve to the meat looks pretty good too.
I would suggest not saucing unless you really need it. and if you do, do it before it goes in the box and then even it up before turn-in.

Score/Reasons = 5, coloration looks very strange and NOT appetizing. Slices are inconsistent in thickness and sizes. BEs are not consistent either. Looks VERY dry!

Suggestions/Comments = Fix the above and it will improve!

9 - slices look moist and yummy - burnt ends look good.

no suggestions... great box.

Bill C./KCBS MCBJ/CTC

SCORE/REASONS: 8. Appears a little over-sauced and burnt ends need to be relatively the same size.

jaja01 KCBS MCBJ CTC
5/7/2013 08:57:16 am

Score / Reasons = 8, meat looks too red but might be the photo. The burnt ends look to be too dry and burnt too much.

Suggestion - Careful with the overcooking of the ends

John - KCBS / MCBJ, CTC, Rep; MBN & MIM Judge
5/7/2013 09:11:57 am

SCORE/REASONS: 8 - BE's look very dry & unappealing.

SUGGESTIONS/COMMENTS: is it my imagination that the slices appear to be sliced on a biased angle to the grain rather than straight across the grain? Regardless, it didn't affect my score. Also, the photo appears to make the slices have a foggy apearance about them, while the BE's are crystal clear. This, too, did not affect my score.

7 at best....No Wow factor. Uneven sauce and brush marks take away from the appearance. Random sizes of Burnt ends. Meat looks dry.
Suggestions- Size the burnt ends. Dip the slices in sauce instead of brushing. Spitz the meat. If you are going to use garnish use it to your advantage and frame the presentation equally.

Johnny Y / CBJ, KCBS, NCBS, NCPC

8 - The burnt ends lack uniformity and appeal; the slices are oversauced

Jim S. CBJ KCBS NEBS

Score/Reason: 8, Meat has some wonderful color and natural look, but looks a bit dry.

Jim H - CBJ SBN/KCBS
5/9/2013 02:23:28 pm

Score/Reasons = 8, picture is not the best quality, but the meat appears moist, has okay color, etc.

Suggestions/Comments = The burnt ends should be trimmed a little more symmetrically; quality of the photo could be better;

    Purpose

The purpose of BBQ Critic's JudgeMyBox section is to provide feedback to competition cooks. Certified BBQ Judges who visit this site will score the photo of a contest box (using KCBS judging rules) and may optionally leave a comment explaining their score.

The idea is to allow the cook to get inside the mind of a judge (judges do have varying opinions) so they can use this information to help improve scores on APPEARANCE.

In turn, the BBQ Critic editorial team will provide feedback on some judge scores and commentary  that stray from the KCBS rules. This will help our judges become better judges and keeps everyone on the same page. Judges may also encounter some fun challenges at times (click for example).

Comments about boxes or judges scores may be discussed in our online FORUM in a respectful manner.

Please be mindful that scoring photo boxes may not be as accurate as scoring the box in person. Lighting, glare, angles, etc may affect the overall score. Judges also have more time to stare at your box, so that means we may get very detailed about the good and the bad.

Have fun, judges! Oh, and cooks? Please send us your boxes. We love to judge Q here at BBQ Critic. ;-)
