The slices look very dry and not apealling to eat. The burnt ends on the bottom don't look moist either.

This looks perfect and just the way I like brisket! I normally would prefer only one type of garnish, but yours is done so beautifully that I really love the overall look of the box. .

Score/Reasons = 6, lots of problems with the meat in this box. Looks dry, uneven coloration, debris on the face of the slices.

Burnt ends look great and the slices look even. If you're going to wet them down make sure you do it evenly...splotches lower the appearance.

Score/Reasons: 6; Appears to be way over-cooked and dried out. To give credit though, the box is very nicely laid out.

Suggestions/Comments: If there was ever a place for a slight bit of beefy glaze, this is it. (Understand I am not recommending gloppy saucing, just a spritz to offset the dryness.)

8 - The slices are a 7. Grey meat is not appealing. The burnt ends are a 9. They look tasty. So the average is an 8.

7 - Good Entry. Including burnt ends show confidence in your product, and they look very tasty. The slices look a little dry, some thin consistent saucing would have scored a little higher. It also appears as though there is some debris on the presenting slice. A cleaner presentation would have also improved the score.

Comments. Big smear of something on the first slice makes the box look sloppy. I didn't score down because of that because the rest of the box looks so good

score / reason 8 slices look evenly cut and color looks good, burnt ends look UN-uniform in size and just thrown in, no uniformity in the arrangement and size of burnt ends.Slices could be a little straighter on the right side.

Score/Reason = 7. The overall arrangement is above average, The cubes appear to be moist and look like they would be tender. The slices are even, but look slightly dry. The splotch of seasoning on the left side of the leading slice is distracting.

Score/Reasons = 9, Good looking box. Maybe the only thing is arrange the burnt ends better. The way they are now, the ends are placed in the box in no order.

7...meat looks pale and dry. Sauce on slices is uneven and sloppy. Back slice doesn't have sauce. Burnt ends looks over cooked.


Dip the slices to add moisture and to get an even coating. Size the burnt ends. The meat is hiding in the garnish. Raise up the meat.

Score/Reasons = 8, au jus needs to be strained or evened out to eliminate the meat goobers such as those splashed across the front slice.
Suggestions/Comments =The big color difference in the burnt ends and the bark on the slices seemed odd but I did not deduct. Even up your sizes on the BEs as some judges will mark down for lack of uniformity.

Appearance 7- Fairly good brisket box. Burnt ends look alittle dry. If your going to use the meat juice, strain it first. Slices in the pic also look alittle dry.

Score 6 The burnt ends look appealing, but the slices look they could be a little dry. Also, the color of the slices take away from the appeal of the box. They just look bland.

Score/Reasons = 7, dry looking slices. Blotches of sauce. Not appealing.

Suggestions/Comments = Slices kill this box in the bad way. Burnt ends look much better. Slices look like they're tough and aren't sauced consistently. Also, the sauce has specks in it, which are unappealing.

7- appearance of slices looks dry- first slice has black specs that detract- and burnt ends are many and uneven in size.

    Purpose

    The purpose of BBQ Critic's JudgeMyBox section is to provide feedback to competition cooks. Certified BBQ Judges who visit this site will score the photo of a contest box (using KCBS judging rules) and may optionally leave a comment explaining their score.

    The idea is to allow the cook to get inside the mind of a judge (judges do have varying opinions) so they can use this information to help improve scores on APPEARANCE.

    In turn, the BBQ Critic editorial team will provide feedback on some judge scores and commentary  that stray from the KCBS rules. This will help our judges become better judges and keeps everyone on the same page. Judges may also encounter some fun challenges at times (click for example).

    Comments about boxes or judges scores may be discussed in our online FORUM in a respectful manner.

    Please be mindful that scoring photo boxes may not be as accurate as scoring the box in person. Lighting, glare, angles, etc may affect the overall score. Judges also have more time to stare at your box, so that means we may get very detailed about the good and the bad.
