7 The meat looks dry. The chunks in front look like they're evenly cut (I can't see the chunks on the right side but I presume they're the same size as the others). The slices are even but I can't see the full slice. The chopped meat in the back doesn't line up with the other meats.

8 - Point looks burnt and dry, may have looked better in person. The rest of the meat looks well cooked.

Score: 8 - Very nice arrangement, uniform slices and burnt ends, color is a bit dark, but overall a good looking box.

Score 7. Not much appeal as the meat appears overcooked, dry and has no color left in the meat. Brisket slices are also covered up by the chunks and it looks like the cook was trying to hide the overcooked slices. The finely chopped meat has no appeal at all.

7. May be higher in person. Tough to judge without seeing the slices. Caution on the three presentations (chopped, slices & BEs) - they all need to be the same quality or the lesser presentation will drag the score down. A little au jus or glaze could improve the appearance of the BEs and chopped. They look a bit dry in the picture. That said, I'd love to try this box.

I give this box a 9 just because of the 3 types of brisket presented. I would like for the samples to be more moist. Other than that, I am ready to dig in.

7. Bottom portion looks overcooked and there is a lot of fat showing in the slices.

The burnt ends in front make it hard to see all of the sliced. What I can see, doesn't look that good to me, because all I can really see is the fat on top of the slices. The chopped brisket in back looks OK, but a little dry. This would be an interesting box to taste. I'd give it a 7 though.

I love the presentation. I wish more cooks did chopped brisket. Looks like your box sat around a bit too long and the surface of the meat dried out. Drops a 9 to an 8.

Nice bark. Not overly sauced. Burnt ends would look better the same size. Slices appear to have fat. The chunks in back look dry and unappealing......7

7-8 I like the inclusion of chopped meat at the back. But the way the slices are laid in the box behind the burnt ends, you can't see the meat well. What I can see looks a little dry. Comments are closed.

The purpose of BBQ Critic's JudgeMyBox section is to provide feedback to competition cooks. Certified BBQ Judges who visit this site will score the photo of a contest box (using KCBS judging rules) and may optionally leave a comment explaining their score.
