Score=9! Great presentation! This brisket looks very appetizing and hopefully tastes as good as it looks.

Suggestion: Please let me know where you will be cooking!!! :)

8 brisket looks good and score would have been a 9 had the fat on the top been rendered and caramelized into bark. the fat rim is a little off putting.

7 - love the 'burnt' ends(9) - hate the slices(5) - grey, dry looking, not enough smoke.

Score: 9 Very nicely done!!

Suggestion: Be the cook that comes up with "Taste-O-Vision" so we don't have to just sit here drooling! Good job!

8 - Another manipulated picture. It would be helpful to try to take the picture as the judges will see the box. Not sure what to make of the presentation in the back. It looks like a mixture of BEs and pulled. I like the fat on the slices but it may put some judges off. As a suggestion I would trim the fat on top. The slices look very good but I'd like to see a bit more bark.

Score = 9. Delicious looking brisket. Appreciate that both the burnt ends and the slices are included. Both cuts look delectable. This is a great example of meat allowed to stand on its own without too much sauce. Very nicely presented.

score=9 can't get much better. just needs eatin

9...Meat looks moist. Nice bark on the Burnt ends. Even cut slices.

Meat is covered by the garnish. Either raise the meat with a bed of lettuce or put the garnish lower in the box.

Ed KCBS MCBJ

Nice full box. Like the non square BE's. Not a fan of manufactured post cook slicing, but as presented, a good job of cuts. Slices a little thick, but I like 'em thicker.
I'm in for a above average 7

Sugg;
I think you'll find as many judges hate the fat strip as like it, you may be better off putting it at the bottom and not let it distract in your presentation score. You'll find out how it's accepted at taste and tender scores.

8 I like this one, nice slices, arrangement excellent, perhaps a bit dry but not clear from photo.

Appearance Score: 7
The slices look dry and dull. The Burnt Ends? (looks like some shredded there as well) is where the party is. I want some of those.
P.S. Nice work on the garnish. Keeping it simple keeps the Judge focused on the brisket, not the greenery.

8 Box looks nice, nice arrangement, my question is why is the top of all the slices differant, uneven, not 1 matches?

7 - This brisket looks uninspiring. Slices appear to be almost gray. Slices also appear not to be facing the same direction (some fat is on left, some fat is on right). I can't tell from the photo what that jumbled pile at the top of the photo (behind the slices) is supposed to be.

Suggestions: If the jumbled pile is supposed to be burnt ends, leave out the slivers and pulled meat. If the pile is supposed to be pulled meat, then use all pulled meat. Don't do, like what appears here, a dumped jumbled mix of both pulled and burnt ends meat. They are two very different things.

7 - Dry looking fatty flat, radom odd looking pieces of point.

8. Slices look dry. The chunks look moist. I'm not a big fan of showing the fat on brisket slices.

Score: 9 Nice!
Suggestions: You might want to trim the top fat a little better. It doesn't bother me but I know a lot of judges are really put off by un rendered fat.

Rich M CBJ/KCBS

Score = 7 I like how the bark in the back looks but the slices look a little dry.

Suggestion: Put something on the slices (sauce, drippings etc.) to make look more moist.

Like seeing the meat presented fat side up--the burnt ends/pulled could be a little better organised--think the slices look better if trimmed before cooking

Doug KCBS MCBJ & CTC

Score = 9. I was going to mark down for the uneven fat on top of the slices, but came to the decision that was nit picky. The burnt ends look awesome and I would be looking forward to tasting them.

Suggestions: I had to think bit about giving a 9 rather than it just being automatic, which it should for a well organized box like this. I like a little fat and it is tasty, but ruins the symmetry of the slices for my eye.

Shawn-KCBS CBJ

I would give this box an 8. Slices are trimmed very uniform and burnt ends look great! I would score this box a 9 if the fat was trimmed off the slices.

Maybe add less meat to the container to make it look less crowded

Jim H - CBJ SBN/KCBS
2/2/2013 06:24:07 am

Score: 7-8 - The meat appears a bit dry and the top of the slices could be cleaned up a bit to give a more symmetrical appearance.

Suggestions: The meat in back could be better placed for a neater appearance; be careful to trim the bits sticking up on the slices toward the back.

SCORE: 8 I like you pulled burnt ends but do not like color on the bark of the slices.

SUGGESTIONS/COMMENTS: The bark on the slices of this weird brownish color that keeps my going to it instead of the meat itself.

8 - a little bit too much fat showing on the slices and the uniformity seems a bit out of place. Not sure about the pulled pieces at the top.

7 looks like strips of brisket, not burnt end chunks that I expect

Looks pretty good, but lacks that "WOW" for a 9. Appears a bit dry too.

6 - average

Comment: Slices look dry in photo. May look better in person. However cubes/chunks/pulled looks moist.

Suggestion: Align slices and cubes/chunks/pulled for even balance appearance. Increase moist look in slices more like cubes/chunks/pulled.

8 - Nice looking box. Well balanced. I would have liked to see a little color in the bark.

    Purpose

The purpose of BBQ Critic's JudgeMyBox section is to provide feedback to competition cooks. Certified BBQ Judges who visit this site will score the photo of a contest box (using KCBS judging rules) and may optionally leave a comment explaining their score.

The idea is to allow the cook to get inside the mind of a judge (judges do have varying opinions) so they can use this information to help improve scores on APPEARANCE.

In turn, the BBQ Critic editorial team will provide feedback on some judge scores and commentary  that stray from the KCBS rules. This will help our judges become better judges and keeps everyone on the same page. Judges may also encounter some fun challenges at times (click for example).

Comments about boxes or judges scores may be discussed in our online FORUM in a respectful manner.

Please be mindful that scoring photo boxes may not be as accurate as scoring the box in person. Lighting, glare, angles, etc may affect the overall score. Judges also have more time to stare at your box, so that means we may get very detailed about the good and the bad.

Have fun, judges! Oh, and cooks? Please send us your boxes. We love to judge Q here at BBQ Critic. ;-)
