7 It just looks burnt and crunchy. Maybe has a great taste but just look is off.

8 - a little rough cuts, but looks darn tasty!

Dan KCBS CTC,MCBJ

6 looks dry and over-cooked maybe even burned

Bill F

5 Wow, burnt offerings, I guess. You know there is some chance this might taste good but the "look" kills it. Forget it, over done for sure. Maybe if some remote corner of the US this is gourmet? You never know.

7,looks kinda burnt on the edges,I'd really like to try a piece of this and see what the flavor is like, sometimes a little char can be a good thing but it's not that pretty to look at.

6. Brisket looks way over-done and poor arrangement in the box. Burnt meat isn't very appetizing.

Dick-MCBJ/CTC
5/6/2013 03:20:15 pm

Score 8. Reason : Due to the rough cuts and the splitting of the meat it just loses the appeal. It appears to be over cooked (splitting). I felt this box was close to scoring a 7, but to give the benefit to the cook it receives the 8. Suggestions: try to keep the excellent meat color, but reduce the really dark bark and slice the meat neater with less rough edges.

Frank KCBS MCBJ CTC
5/6/2013 03:55:12 pm

Score/Reason - 6. Bark may be too dark and appears overcooked. Edges very ragged and sauce appears clumped on bottom left of first slice.

Suggestions/Comments - Burnt ends appear a little large compared to the slices.

7 - Sloppy arrangement.

Score/Reasons = 8, looks amazing except the outside could be a little burnt.

Suggestions/Comments = now i'm hungry

Deb KCBS MCBJ, CTC
5/7/2013 01:10:56 am

Score/Reason: 7, While the bark looks tasty, the meat has the appearance of having been overcooked a bit. Slices are of inconsistent thickness.

Suggestions: Overall, the box is well constructed; just needs a little "tweeking" to bring the score up. The garnish is very fresh looking and makes a nice base to showcase the meat.

8 beautiful color would prefer more neatly trimmed pieces of meat

score=7
a little rough but tasty looking, may be a bit over done

Ed KCBS MCBJ

Not the traditional looking brisket box, but man does it look tasty!!!
Slices pretty cut up, it appears to be way overdone almost ready to fall apart. The BE's look quite yummy, here's one place where absolute uniformity isn't required.
I can only go for a above average 7.

Shawn-KCBS CBJ and Comp Cook

Score/Reason: I would score this box a 6. Meat has a burnt, dry, and not appealing look.

Suggestion: It may be a good idea to chop or pull the brisket and apply sauce to make it more appealing.

Doug KCBS MCBJ & CTC

Score = 7, Slices look very ragged, even though it is neatly laid out, the box looks sloppy.

Chaz D KCBS CBJ
5/7/2013 05:47:42 am

Score: 8 The bark looks a bit dark and the meat looks a bit overdone. On the plus side the box and layout are good and the meat has awesome color. You have a couple burnt ends that look a little too "burnt". I would have considered not using them.

Score/Reasons = 9, definitely NOT perfect, but doesn't have to be to be excellent. Can't wait to bite into this box!

Suggestions/Comments = Kinda jumbled in the box

Bill C. KCBS MCBJ/CTC
5/7/2013 08:57:38 am

SCORE/REASONS: 7. Meat appears over-sauced; slices appear jagged.

SUGGESTIONS: Redistribute the slices and burnt ends to evenly space the meat in the box.

jaja01 KCBS MCBJ CTC
5/7/2013 09:22:47 am

Score / Reasons = 6, The meat does not look appetizing. The slices are unevenly cut and are not placed in the box neatly. Some of the slices appear to be dry and the tops of some of the slices and the ends appear to be burnt.

Suggestion / Comments = Place the meat in the box more carefully to ensure the slices are neat. The slices can be cut more carefully. The burnt tops may be rub but this could affect the taste but does affect the appearance.

John - KCBS / MCBJ, CTC, Rep; MBN & MIM Judge
5/7/2013 10:12:45 am

Score/Reason: 6 - The bark appears burnt, the slices appear to be wreklessly hacked rather than carefully sliced, the BE's appear like lumps of charcoal waiting to be lighted.

Suggestions/Comments: Please fix the reasons above would be a great start. Take look at some other brisket boxes to see what others are doing.

6.....Meat looks dry and the bark is burnt. Ragged uneven slices.

Suggestions-Don't over cook the meat. Foil the meat to prevent burning. Work on your knife skills. Spray the meat before turn in for a little shine.

Bruce Heckart

Score: 5 Reason: The meat looks over-cooked. Not sure if I could bite through the meat on the chucks. The slices are jagged and looks like the slices were torn apart, not cut with a knife.

6 - I am not sure what happened in this presentation; it is not appealing.

Jim S. CBJ KCBS NEBS

Score/Reasons = 9, Meat has a beautiful color and a very natural look to it.

Jim H - CBJ SBN KCBS
5/9/2013 03:16:50 pm

Score/Reasons = 8, while the color is great and the meat appears to be delicious, the meat is in bad need of trimming and is a little sloppy! However, I'd still eat the meat without question!

Suggestions/Comments = Take more care in trimming the slices before submitting the entry!

8, I really like the color. I'm NOT a fan of burnt ends but those look delicious. The 2nd & 3rd slices from the top look like they were not cut very well- overall I like the presentation

    Purpose

The purpose of BBQ Critic's JudgeMyBox section is to provide feedback to competition cooks. Certified BBQ Judges who visit this site will score the photo of a contest box (using KCBS judging rules) and may optionally leave a comment explaining their score.

The idea is to allow the cook to get inside the mind of a judge (judges do have varying opinions) so they can use this information to help improve scores on APPEARANCE.

In turn, the BBQ Critic editorial team will provide feedback on some judge scores and commentary  that stray from the KCBS rules. This will help our judges become better judges and keeps everyone on the same page. Judges may also encounter some fun challenges at times (click for example).

Comments about boxes or judges scores may be discussed in our online FORUM in a respectful manner.

Please be mindful that scoring photo boxes may not be as accurate as scoring the box in person. Lighting, glare, angles, etc may affect the overall score. Judges also have more time to stare at your box, so that means we may get very detailed about the good and the bad.

Have fun, judges! Oh, and cooks? Please send us your boxes. We love to judge Q here at BBQ Critic. ;-)
