8 - Meat appears somewhat dry. Also, smoke ring looks too wide. Perhaps artificial?

Dan KCBS CTC,MCBJ

7,hard to judge blurred pic
Smoke ring is unusually wide

Ike, CBJ/KCBS
5/14/2013 11:45:00 pm

8. Varience in slice lengths take away from this brisket. Can't see the burnt ends very well to judge them. Meats looks juicy, which is good, but the smoke ring actually distracts from the meat.

7, meat looks rare (might be the picture) and has an odd brown streak running through the center.

I did like the layout and asymmetrical appearance.

7 - ends look dry. Smoke on slices looks artificial.

8 i would like to see all of the pieces the same size otherwise, looks pretty good.

Score: 8 the smoke ring is very strange and a bit unappetizing. but the meat does look moist.

I dont know how you got that bizarre smoke ring but I would try to not do that. Its looks really unnatural. Also, try to trim the fat off the bottom of the slices if you can.

Score/Reasons = 8, Looks pretty good, but I'm not crazy about the overall appearance of the box. Nice job of using all consecutive slices, even though they aren't all the same size. The BEs don't help this box! Out of focus, but they look jumbled in the back like they were an afterthought.

Suggestions/Comments = Better camera focus would help tremendously! Items I didn't judge on: Nice smoke ring - but it almost looks artificial! I like the fat on the bottom of the slices too.

Frank KCBS MCBJ CTC

Score/Reasons = 6, probably higher in person. This picture is too poor to properly judge. Can't discern if those are burnt ends at the top.

Suggestions/Comments = The smoke ring looks very unnatural. The arrangement of the burnt ends could be improved. Some judges may mark down for the fat on the bottom.

7.....Very unnatural looking brisket. Meat looks dry. Sliced burnt ends has good bark.

Suggestions: Even though we don't judge the smoke ring, this one takes away from the appearance.. Looks artificial. Trim or hide the fat on the front slice. Chunk the Burt ends. Spray before closing the lid.

Ed KCBS MCBJ
5/15/2013 02:47:37 am

Another crappy picture... Here's why KCBS doesn't judge smoke ring,
I suspect this was artificially enhanced I've never seen such a deep smoke ring. Slices are well cut and arranged nicely. A little fat on the bottom, some like it some don't. The other meat offering looks more like sliced pork muscle than "burnt ends".
Best I can do is above average 7.

Bill F.
5/15/2013 02:49:35 am

7 (The focus and lighting is off, difficult to judge.) The slices are uniform and not over sauced, thickness unknown. Taste and texture might save this entry but you had to be there.

Henry KCBS CBJ

8 need to see chunks in front other than that looks good

John - KCBS / MCBJ, CTC, Rep; MBN & MIM Judge
5/15/2013 04:03:41 am

Score/Reasons: 8 - Nicely arranged box.

Suggestions/Comments: Gave benefit of fuzzy photo doubt to the cook. I have NEVER seen a smoke ring that deep. Makes me wonder how "hammy" the taste will be, but I'll judge THAT when it's in my mouth. Better photo is imperative.

Doug KCBS MCBJ & CTC

Score = 8, brisket looks a little dry from this photo.

Comments: I debated scoring down for the ragged edge on the right hand side, but that is just how the meat is and I didn't feel right about it. Trimmed on both sides looks neat, but natural is OK too.

Score / Reason = 6, The red "smoke Ring" really takes away from the appearance and makes it very unappetizing. The burnt ends are difficult to see due to the lighting on the pic.

Suggestion / Comment = Don't submit meat this this type of "smoke ring". It is not conducive to getting good scores.

Neil Buchwalter
5/15/2013 10:07:56 am

score = 7, smoke ring looks "fake" or perhaps the meat is way over smoked and burnt ends look overdone
comments = go with the more "traditional" cube style burnt ends rather than what looks like slices

Pete - KCBS
5/15/2013 11:03:13 am

score 7 - might have trimmed the fat a little tighter to the meat on this brisket.

suggestions - photo is fuzzy, would love to have a better look at the end pieces in the back of the box.

Don

7 - although nice uniform cuts it does look a bit dry to me, burnt ends are there but cannot tell much about them (not sure if it is just the photo), also cannot tell width of cuts.

7 Poor picture quality prevents one from seeing meat texture.

Kendall - CBJ
5/16/2013 01:27:12 am

Maybe it's just the pic, but the meat looks quite red even though the middle of the cut does look fully cooked. I'd give it an 8 but it maybe a 9 in person.

Tony S CBJ

7 too pink for me and burnt ends look charred

Deb KCBS MCBJ/CTC
5/16/2013 06:22:41 am

Score/Reasons: 8/ While the slices look ok, the burnt ends appear charred.

Suggestions/Comments: The poor photo doesn't do the cook any favors here.

Score/Reason: I would score this box a 7. Color looks very interesting.

Suggestion: I would like to try this brisket to see what this tastes like. It has a color like no other I have ever seen.

Mike S.; KCBS MCBJ &,BBQ-Brethren RJ

Score/Reasons = 7, smoke ring looks fake, and I know it is almost impossible to get a smoke ring thicker than 1/4". Though smoke ring is not to be considered, this large ring does not look appetizing.

Suggestions/Comments = None

Dick-MCBJ/CTC

Score 9. This brisket looks great without being covered in a sauce. The meat also appears cut from the same brisket and has great color.
Suggestion: I would like to see the sides of the burnt ends. Showing them from all sides along with the tops would be an improvement to this entry,

Comment: Maybe an 8 in person.

7 - Nice layering of slices although some are a bit mis-shaped. KCBS does not judge on the smoke ring so I will not either.

Not uniformed in size. Looks dry. Just average box.

Score/Reasons =6 meat looks un-natural. Fat at bottom of slice not appealing. Can not see burnt ends well. Pieces are not uniform in length.

Suggestions/Comments =smoke ring looks like it takes over the whole slice of meat. Tilt burnt ends so judges can see inside of meat, Looks dry, maybe light sauce could help.

Jeff KCBS CBJ

Score/Reason 7 uneven cuts color very unappealing

GeorgeB
5/21/2013 07:07:58 am

Score/Reason = 6, looks dry. Coloring not very appetizing.

Suggestions/Comments = may look nice if slices were not left justified in the box. A little more sheen on the slices and chunks would make them look moister.

Tom Epler, CBJ PNWBA
5/31/2013 04:36:42 am

8, a little hesitant on this. Looks moist, could be more uniform. I know we do not judge a smoke ring, but this draws your eye to it. Would like to taste it to see if more of a ring makes a difference.

    Purpose

The purpose of BBQ Critic's JudgeMyBox section is to provide feedback to competition cooks. Certified BBQ Judges who visit this site will score the photo of a contest box (using KCBS judging rules) and may optionally leave a comment explaining their score.

The idea is to allow the cook to get inside the mind of a judge (judges do have varying opinions) so they can use this information to help improve scores on APPEARANCE.

In turn, the BBQ Critic editorial team will provide feedback on some judge scores and commentary  that stray from the KCBS rules. This will help our judges become better judges and keeps everyone on the same page. Judges may also encounter some fun challenges at times (click for example).

Comments about boxes or judges scores may be discussed in our online FORUM in a respectful manner.

Please be mindful that scoring photo boxes may not be as accurate as scoring the box in person. Lighting, glare, angles, etc may affect the overall score. Judges also have more time to stare at your box, so that means we may get very detailed about the good and the bad.

Have fun, judges! Oh, and cooks? Please send us your boxes. We love to judge Q here at BBQ Critic. ;-)
