Score = 6

The box looks a little sloppy with the with the dabs of sauce around the edges. The slices look OK, not exactly uniform. I can see the smoke ring but by KCBS standards we cannot judge that because smoke ring's can be chemically enhanced. I really like the color and moisture on the Burnt Ends.

9 - nice fanning, colour and look to the slices. burnt ends look good as well.

9 I like this one. Moist, nice slices and I like those chunks.

Score - 9 - very pretty box. Good color in brisket, looks moist. Burnt ends look awsome!

9! Good layout, nice placement, good color and look moist.

7 stack a bit uneven along with the difference in length, color good, can't
tell much about BE's

Bobby Whitefield

Slices are uniform showing the best of each slice. The burnt ends are gorgeous. Everything looks moist and ready to be sampled. My only suggestion would be to work on the arrangement of the burnt ends so they look like they weren't thrown into the box as an after thought. All in all, a very nice box; an easy 9

Larry MCBJ

8 - Nice presentation and color. Good moisture!

Suggestion: Even the length of the slices and arrange the BE's so the box shows good, even symmetry Also, remove the goobers on the bark of several slices. Then, a 10 from me!

Score/Reasons: 9 - very nice box of brisket. Not perfect, but it is excellent anyway.

Suggestions/Comments; A tidier arrangement of the burnt ends would make for a more attractive appearance that is not as jumbled as these are.

Jeff KCBS CBJ
6/27/2013 03:42:15 pm

score/reason 8 nice color & moisture appealing, slices could of been cut more even and burnt ends look like they were just thrown in.

Jim H - CBJ SBN/KCBS
6/27/2013 04:16:56 pm

Score/Reasons: 8/while the meat looks really scrumptious, there are little detractors: "Debris" on some of the strips, which could have been carefully removed; the placement is left-justified which causes a slant to the meat!

Suggestions/Comments: Be careful to trim the little bits that stick up, out, etc.

Ralph, KCBS CBJ

9 - Looks fantastic, can't wait to taste both the bark on the slices and the burnt ends as looks moist and promising in terms of texture.

Would suggest wiping up the box a bit and the garnish is borderline distracting but the meat overcame!

9 - slices look uniformly clean cut and moist, very appetizing to the eye. Burnt ends look juicy and tasty. I would want to eat this brisket. Although the smoke ring should not be judged, this brisket has an impressive smoke ring, very nice.

Score 9 - Great looking brisket, easy 9 on appearance, wonder if this one passed the pull test

Mike Cannon
6/27/2013 06:12:50 pm

6 - looks artificial. why so different colors in slices and chunks?

smoke ring on slices looks odd - chemistry at work?

George

9 - Looks great.

Dick-MCBJ/CTC

Score 7. Reason: The burnt ends ruined this score. If the box would have contained only the sliced brisket, I believe, it would have received a 9. The burnt ends look off-color, overcooked, and dry. Suggestion to all cooks: If park of your entry is not quite up to par-LEAVE IT OUT !. Nothing states you must place it into the box and something that is not up to your usual standard can be left out. It will improve your scores.

Score/reasons: 9 Nice presentation and the meat looks nice and juicy.

Suggestions/Comments: Just an observation but the slices are in the box a bit crooked and be careful to wipe the sauce off your box before you turn it in. Some folks might cut a point for a sloppy box.

Russ Hazzon
6/28/2013 12:14:40 am

Score/Reasons = 7 or 8, burnt ends look good, but the slices have an off-color (possibly bad lighting) and the symmetry is a little off.

Suggestions/Comments = cut slices to even length, try to get a darker bark on the flat, garnish could be laid out more evenly.

Shawn-KCBS CBJ and Comp Cook

Score/Reason: I would score this box an 8. Meat looks moist.
Suggestions: I would have given this box a 9 if the meat was trimmed more uniform and the inside of the box was wiped clean.

Clean the box up around the edges.

Scored a 9 - VERY nice entry. I like the way the meat starts off one size in front and each piece gets bigger.

Score = 9

Comment: The only thing I can nit pick on is the varying sizes of the burnt end chunks, but not enough to drop the score as it looks very appetizing to me.

Suggestions/Comments = Be sure to clean the sides of the box from the grease and juice with a paper towel.

9 nice uniform savory looking brisket. Gonna give you the Benefit of doubt, burnt ends got juice on the plate, take a little better care in plating

Score/Reasons = 9, looks GREAT! Not perfect, but doesn't have to be!
Good color and looks moist.

Suggestions/Comments = I'm not crazy about the way you trimmed the brisket before cooking - looks too square. Good smoke ring (not judged!). Take more care with placing the BEs in the box as it looks a bit jumbled.

9 - it looks moist and tender, with generous portions. I can't wait to try this meat.

Suggestion - next time use more garnish to keep the sauce from smearing on the sides of the box. That streak in the lower right corner could be considered marking and get you DQ'd.

Rod

i'd give it an 8,the pieces are tapered quite a bit, ,sounds kinda nit picky but that's the difference between a 8 box and a 9 box. Burnt ends look REAL good to me.

Ed KCBS MCBJ
6/29/2013 01:10:44 am

Great looking box. Slices look moist and tasty, as do the BE's.
Only complaints are the box is messy, clean up the smears and shift the slices clockwise just a bit. These 2 problems keep it from really being excellent so I give a very good 8.

Score/Reasons = 9, this box looks good.

Suggestions/Comments = Suggest lining up the burnt ends. As presented, the burnt ends appear to be tossed in the box.

Matt KCBS CBJ

Score/Reasons = 8 - meat looks tasty and moist, burnt ends look fantastic.

Suggestions/Comments = I'd pay more attention to placing the meat in the box for presentation... "organize" the burnt ends a little more and center the flat cuts. And maybe wipe the sauce off the sides of the inside of the box.

Frank KCBS MCBJ CTC
7/1/2013 01:09:29 am

Score/Reasons = 9, sliced looks moist, with a nice light glaze. Nice looking box.
Suggestions/Comments = BEs look a little small and dark and may or not be dry so I did not lower the score. Others may not see it this way. If they are not as strong as the slices, leave 'em out of the box.

9 one of the most beautiful boxes I have seen in a long time. The color on the burnt ends was outstanding

Dan CBJ/KCBS
7/2/2013 06:45:09 am

Score=9.

Everything about the slices and the burnt ends looks very good to me. It has a nice sheen to it which suggests moistness. The garnish is a bit lost in the box and there are a few messy drips but the meat looks great.

Scott - KCBS CBJ

Score/Reasons = 9, excellent. Moist, nicely colored. Both slices and burnt ends equally appealing in their own right.

    Purpose

The purpose of BBQ Critic's JudgeMyBox section is to provide feedback to competition cooks. Certified BBQ Judges who visit this site will score the photo of a contest box (using KCBS judging rules) and may optionally leave a comment explaining their score.

The idea is to allow the cook to get inside the mind of a judge (judges do have varying opinions) so they can use this information to help improve scores on APPEARANCE.

In turn, the BBQ Critic editorial team will provide feedback on some judge scores and commentary  that stray from the KCBS rules. This will help our judges become better judges and keeps everyone on the same page. Judges may also encounter some fun challenges at times (click for example).

Comments about boxes or judges scores may be discussed in our online FORUM in a respectful manner.

Please be mindful that scoring photo boxes may not be as accurate as scoring the box in person. Lighting, glare, angles, etc may affect the overall score. Judges also have more time to stare at your box, so that means we may get very detailed about the good and the bad.

Have fun, judges! Oh, and cooks? Please send us your boxes. We love to judge Q here at BBQ Critic. ;-)
