7 - Burnt ends look dry. Front slice has a piece of fat that distracts and the slice could be more evenly placed in the box.

7 at best. Looks dry and over cooked. No bark. Burnt spots.

Put a glaze on the meat. Dip it in Au Jus before putting in the box. Spitz before closing lid. Make uniform size Burnt Ends.

Score = 8. Nice arrangement of the meat and box looks full even without garnish. However, the brisket looks dry.

7. Good layout, even color, nice bark. However, the slices look dry and they do not line up evenly along each side.

Score 8. I would suggest that the cook reconsider the layout of the box. I would like to see the slices and not more ends that were placed in front of the slices. With seven slices the cook could have easily placed one more in the back of the box and not hidden the sliced brisket. 7slices with 10 ends ?????

Score/Reasons = 6, this meat looks dry - so dry just looking at it dried my mouth. Not something I'd look forward to tasting.

Score/Reasons = 7, I'm waivering between a 7 and an 8 as the picture makes the meat appear a bit dry and the bark looks unevenly cooked. That said, there is some sheen to some of the pieces so it may be the picture. It's a nice, full box which is needed if you have no garnish.

Suggestions/Comments = Some judges will look for a neater arrangement with more uniformity. I did not mark down for that here, but some will.

8 - Here again some judges might rate this down due to the lack of garnish. That is also wrong. I gave it an 8 because the meat looks dry.

7- Nice box of brisket. Fairly even cut. All pieces have a dry appearance.

Suggestion : Brush with sauce/juice would make it appear more moist.

Score/Reasons: 6 - This box of brisket appears dry, dull and boring. If I were a judge AND allowed to "pass" on judging a box, I'd pass on this one. Unfortunately, maybe my score of 6, which is deemed to be "average," may be too generous.

Suggestions/Comments: Where to start?! I can't tell the REAL condition of this meat, but please at least give it a spritz of liquid or a glaze of sauce to put some life in the appearance...even if the taste/tenderness is substandard. For me, this appearance is so off-putting, I'm afraid it won't score well on taste/tenderness even if it was the best brisket I've ever put into my mouth.

7 - It appears dry, I do not see any hint of moisture. The color is all over, looks like grill marks on some of it and the ends of the slices.

Comments... my six does not reflect a lack of garnish... we are trained to ignore that. The 6 is simply for the less than average appearance of the meat itself.

I would score this box a 6. Meat looks very dry, color is not appealing, and pieces are not cut very uniform.
Suggestion: dip the meat is some juice before turn in to give a wet look.

Slices exceed the width required by KCBS or IBCA. Meat look overvooked and dry. Not inviting. I give it a 3.

Score/Reasons = 7, the crust looks good but the rest of the meat looks very dry, The ends could be more equal in size.

Suggestions/Comments = Add a little sauce, not bouillon or canned type, to the meat to keep it moist. Also cut the ends so they are the same size.

Score/Reasons = 7, just slightly above average to me. The beef looks overcooked and dry. But, the box is full and I like the symmetrical idea of the presentation (burnt ends at top and bottom of box)

Suggestions/Comments = Don't overcook the brisket.

4 -5 box looks sparse, no greenery; the meat doesn't pop out at you, meat looks very dry, there is no color on the meat like a typical comp brisket.

Comment: This is one of those boxes you dread seeing because you are gonna have to eat it. I'm sorry but this is about as bad as brisket can look. Dry and no bark. The color is awful. I really hope this is all a product of a really bad pic and not the actual meat.

    Purpose

    The purpose of BBQ Critic's JudgeMyBox section is to provide feedback to competition cooks. Certified BBQ Judges who visit this site will score the photo of a contest box (using KCBS judging rules) and may optionally leave a comment explaining their score.

    The idea is to allow the cook to get inside the mind of a judge (judges do have varying opinions) so they can use this information to help improve scores on APPEARANCE.

    In turn, the BBQ Critic editorial team will provide feedback on some judge scores and commentary  that stray from the KCBS rules. This will help our judges become better judges and keeps everyone on the same page. Judges may also encounter some fun challenges at times (click for example).

    Comments about boxes or judges scores may be discussed in our online FORUM in a respectful manner.

    Please be mindful that scoring photo boxes may not be as accurate as scoring the box in person. Lighting, glare, angles, etc may affect the overall score. Judges also have more time to stare at your box, so that means we may get very detailed about the good and the bad.
