9............Great looking box of brisket. Everything about it is excellent.

Nothing to tweak.

Score/Reasons: 9; Super looking meat! Looks nice and juicy.

Suggestions/Comments: The only thing I might add is a few chunks to improve the fullness of the box, but the entry is great as it is. Good job!

Score = 9. Good looking box of brisket. Nice, even slices and not over-sauced.

a 9! Good layout, even sized, even color, look moist, nice bark. Very attractive box.

Score 8. Reason: The texture of this entry does not appeal to me. I do not know why this brisket looks so unappealing. It looks more like formed meatloaf than brisket. ????

Score - 9. Great looking brisket - moist and great color

Doug KCBS MCBJ & CTC

9-Great looking brisket entry! Appears moist, looks appetizing.

Frank KCBS MCBJ CTC
12/17/2013 05:07:22 am

Score/Reasons = 9, Nice looking meat with a light glaze.

Suggestions/Comments = Judges may (they should not) mark down for no burnt ends. Judge what is presented! Some may also quibble about the specks on the meat from the light saucing process. I do not mark down for that.

9 wouldn't change a thing!

John - KCBS / MCBJ, CTC, Rep; MBN & MIM Judge
12/17/2013 07:29:42 am

Score/Reasons: 9 - nice looking box of brisket. It appears moist, almost jumps from the box, not too much glaze. Very nice presentation.

Suggestions/Comments: If time permits, tidy up "loose ends" like on the 3rd slice left end and 4th & 5th slices, right end. Those little loose threads can detract from an appearance score. Also, suggest putting in a few more slices. A fuller (is that word?) box will look better.

8 - Entry looks good but has me wondering about the color. Can't make out the grain of the meat, smoke ring looks dark and bark appears black. Moisture is showing but is it just a coating? I can't give a nine.

I would score this box a 9. Looks delicious!
suggestion: put some burnt ends in the box if you have any.

Excellent, uniform slices with perfect saucing. This is about as good as it gets with a fantastic presentation of great looking brisket. Perhaps a bit more garnish could be added, but overall a beautiful turn in box worthy of a 10.

If his taste and tenderness scores match his appearance score ( 9 ) he's definitely a 1st place winner. A gorgeous looking box. Nice job !

Score/Reasons = 9, The meat look pretty good. I color is just a little bit dark, which I think may be caused by the sauce.

Suggestions/Comments = Just add a little less sauce.

Score/Reasons = 7 Very neat box. When I see meat dipped in beef stock I suspect it may be dry.

Matt KCBS CBJ
12/20/2013 04:38:49 am

Score/Reasons = 8, Very good, but the shine is a bit distracting. That could be the camera flash, and this box might be a 9 in person without that added effect. I can tell there was a lot of care in preparing presentation of this box.

Suggestions/Comments = None

    NAME FIELD ON FORM:
     State name/CBJ Organization (i.e, Tom - CBJ/KCBS). CBJ=Certified BBQ Judge

    EMAIL FIELD ON FORM:
You must be a "registered" BBQ Critic Online Judge in order to judge boxes on this site. Proof of registration is your email. All registered judges are required add their email to the email form field. Emails are kept private and not published. If you do not list your email, your score/post will not appear on the site.

SCORE/REASONS FOR SCORE: Score this entry and give reasons for your score. DO NOT mention garnish or smoke rings in your reasons for scoring. We judge meat only.

    Purpose

The purpose of BBQ Critic's JudgeMyBox section is to provide feedback to competition cooks. Certified BBQ Judges who visit this site will score the photo of a contest box (using KCBS judging rules) and may optionally leave a comment explaining their score.

The idea is to allow the cook to get inside the mind of a judge (judges do have varying opinions) so they can use this information to help improve scores on APPEARANCE.

In turn, the BBQ Critic editorial team will provide feedback on some judge scores and commentary  that stray from the KCBS rules. This will help our judges become better judges and keeps everyone on the same page. Judges may also encounter some fun challenges at times (click for example).

Comments about boxes or judges scores may be discussed in our online FORUM in a respectful manner.

Please be mindful that scoring photo boxes may not be as accurate as scoring the box in person. Lighting, glare, angles, etc may affect the overall score. Judges also have more time to stare at your box, so that means we may get very detailed about the good and the bad.

Have fun, judges! Oh, and cooks? Please send us your boxes. We love to judge Q here at BBQ Critic. ;-)
