8 color nice and even

8......Nice bark. Meat looks moist. Even cut slices. The burnt ends look very good. The cut on the burnt ends is ragged. The Slices aren't lined up in an even row.

Move the meat back in order to give a more balanced look. I like the fat, some judges won't

Deb KCBS MCBJ/CTC

Score/Reasons: 8; While the meat does look well cooked, the box is a little haphazard looking. A bit more attention to detail would probably have brought the appearance score up to a 9.
Suggestions/Comments: Be a little more cautious about the placement of the meat- every little bit counts.

Ike, KCBS CBJ
12/17/2013 01:29:45 am

Score = 9. I like the looks of this box as the brisket appears very moist. There is some fat showing but the bark and overall appearence of the meat is good.

Score 8. Reason: Great brisket that looks to be moist and has good color. I would like to see the pieces cut neater and more care taken when assembling the box.

David - CMBJ/KCBS
12/17/2013 01:53:31 am

Score - 8- good color on the brisket but the presentation is quite uneven and poorly balanced. Looks almost like box was held at an angle and everything slid forward.

Doug KCBS MCBJ & CTC
12/17/2013 02:13:52 am

Score = 8, Meat looks a little jumbled in the box and isn't trimmed to fit the box which makes it look sloppy. Two burnt ends on the left end looks like the cuts aren't clean.

Tiffany - KCBS CBJ
12/17/2013 02:18:52 am

Score/Reasons = 7, it's fine if brisket has some fat, but this is too much, doesn't make me want to grab a slice. But it does look well cooked and moist.

GregG KCBS/MCBJ
12/17/2013 04:55:45 am

9 - Excellent looking brisket box. Does not appear to be dry or overly sauced. Great job!

Frank KCBS MCBJ CTC
12/17/2013 05:52:53 am

Score/Reasons = 8, Tough to see the flat from this angle, but giving this the benefit of the doubt. The slices look like there may be too much fat left - but may be the angle. I like fat but there appears to be a bit much on the slices.. Great bark and looks very juicy. I'd love to try this box!

Suggestions/Comments = I would straighten out the slices and even up the burnt ends as some judges will mark down for not doing so. You could use the garnish to better hide any blemishes on the ends of your slices and tray for even cuts on the burnt ends as well.

6 appears to be quite a bit of fat that doesn't look appealing to me. trim more of the fat before cooking or render it more before serving.

score: 8
Burnt Ends not quite uniform, Flat looks moist and nice bark

8 - I would recommend leaving out the slices, the burnt ends look fantastic while the slices have a lot of fat. Good moisture, good color.

John - KCBS / MCBJ, CTC, Rep; MBN & MIM Judge
12/17/2013 07:56:17 am

Score/Reasons: 7 - The meat looks moist but the presentation is lacking. It almost looks as if the slices and left 3 cubes were almost tossed into the box. The left 2-3 cubes are showing their raggedy edges. With less than one minute more of care, this could be a very nice box.

Suggestions/Comments: Line up the slices so they almost look like soldiers in formation. Tidy up the cubed meat presentation so they look uniform, too, and don't show the raggedy "feet."

7... the under-cooked appearance of the fat really detracts. It may not be tough, but it sure looks like it will be.

Shawn-KCBS CBJ and Comp cook
12/17/2013 09:57:46 am

I would score this box a 7. Meat is not trimmed uniform and was not placed in the box with care.
Suggestion: place some extra garnish in the box to raise the meat up to make a more stand out presentation.

Bill C. KCBS MCBJ/CTC

Score/Reasons: 8 Arrangement could be better. Meat looks moist.

Bobby Whitefield
12/17/2013 12:19:12 pm

Rather sloppy and haphazard presentation. Brisket color is good but arangement does not show the best side of the brisket slices. Maybe a 6.

Steve R - KCBS & BBQ Brethren CBJ

The meat looks "pretty good" and presentation is just ok.
Scored a 7

7-knife skills need work- (chunks look sloppy) color is off. more sauce?

JohnnyY/NCPC,NCBS,CBJ,KCBS

8 - Meat pieces are unevenly cut; the arrangement could be more symmetrical.

DJ Martin
12/19/2013 10:12:51 pm

Score/Reasons = 8 Looks very moist. Fat cap could have been trimmed a little closer and the cuts on the point cubes are ragged.

Matt KCBS CBJ
12/20/2013 04:42:51 am

Score/Reasons = 7, meat looks fatty and undercooked, hasty and sloppy placement in the box, burnt ends have ragged edges, the bark has a nice color, though

Suggestions/Comments = Work on tightening up placement in the box, make slices the same thickness and don't forget that symmetry is nice. Its all about the details!

Seaton Hall - KCBS
12/20/2013 05:59:35 am

8. The meat looks tasty, but the presentation is just too haphazard in the box.

Tom - CMJ/KCBS, CBJ/MBN,NCPC,NCBS & comp cook
12/23/2013 02:19:19 am

Score/Reasons = 8, meat looks moist and good, but the cuts should be cleaned up (ragged) and the slices arranged with more care to be a 9.

Suggestions/Comments = shorter slices would fit in the box better (didn't affect my score)

Derussi

7 Appearance of the box suggests theat the meat was just put in with little thought.

Tony Schroeder

7 need to trim meat

Michael KCBS: MCBJ CTC
12/24/2013 03:33:28 am

7 - 8 the burnt ends need to be trimmed better, looks like a little too much fat on the slices. Looks moist.

Jeff KCBS CBJ
12/25/2013 07:19:16 am

score/reason 7 looks just thrown in box burnt ends need to be more uniform in size and trim the fat from the slices, not very appealing don't wanna taste fat

Chaz D KCBS CBJ
12/26/2013 10:26:18 pm

Score: 9 Good looking brisket

Comment: I almost dropped this to an 8 because the pieces are haphazardly arranged but the appearance of the meat itself is so good I went with the 9. Just know that some judges are gonna deduct for the arrangement.

    Purpose

The purpose of BBQ Critic's JudgeMyBox section is to provide feedback to competition cooks. Certified BBQ Judges who visit this site will score the photo of a contest box (using KCBS judging rules) and may optionally leave a comment explaining their score.

The idea is to allow the cook to get inside the mind of a judge (judges do have varying opinions) so they can use this information to help improve scores on APPEARANCE.

In turn, the BBQ Critic editorial team will provide feedback on some judge scores and commentary  that stray from the KCBS rules. This will help our judges become better judges and keeps everyone on the same page. Judges may also encounter some fun challenges at times (click for example).

Comments about boxes or judges scores may be discussed in our online FORUM in a respectful manner.

Please be mindful that scoring photo boxes may not be as accurate as scoring the box in person. Lighting, glare, angles, etc may affect the overall score. Judges also have more time to stare at your box, so that means we may get very detailed about the good and the bad.

Have fun, judges! Oh, and cooks? Please send us your boxes. We love to judge Q here at BBQ Critic. ;-)
