9 nice box

9 - Looks moist and delicious.

a 9! Evenly spaced. Nice arrangement. Good color. Even sized pieces. Look moist.

Score - 9 beautiful burnt ends and presentation.

comment - maybe a bit longer for the brisket slices in the future??

Michael Cannon
12/29/2013 02:13:58 am

7 - Looks good, but I am concerned about the vast differences that supposedly came off the same brisket. Or does this organization allow the entries to be parted out and cooked on different grills?

Dick-MCBJ/CTC
12/29/2013 02:37:30 am

Score 8. I do not care for the glossy sauce this brisket has been coated with. It give the entry a plastic look which is not a true representation of brisket.

Score 9
The pieces are not overly sauced and look very shiny. The burnt ends in the back of the box look very uniform and nice.

7 overly wet down the meat

8 would like to see a darker bark on slices.

Bill C. KCBS MCBJ/CTC
12/29/2013 07:11:14 am

Score/Reasons: 8. Can's fully see the slices and a little too much sauce.
Suggestions/Comments: I would ask a rep to evaluate the box as a marked container because of the 4 corners having the sculpted garnish.

9- Not the best picture, but...appears moist - possibly too much so. Was split between 8 and 9. Benefit goes to the cook.

Score = 8.

Slices aren't even and burnt ends could possibly be over done. Allowing for the picture.

Doug KCBS MCBJ & CTC

Score = 9 hard to get a good look at the meat from the angle of the photo, but from what I can see it looks great.

Kev B

Score: 8

Suggestion: Do not like the color of the meat. Meat also looks a little thick. Burnt Ends seem to vary in size and appears going from small to large.
Comments: I love your garnish. Love the setup and the color.

Score/Reasons: 9 - nice box. Looks moist and appetizing.

Suggestions/Comments: IMHO, a more full box would make a better appeaarance.

Score/Reasons = 8, burnt ends look great, but the brisket looks a little gray.

DJ Martin

Score/Reasons = 9 Great looking slices and cubes.

Score: 9

Comment: Nice looking box and the meat looks pretty good from what I can see of it in the pic. Be careful with that garnish tho, its running the risk of being defined as a marked box the way its laid out.

7 - 8 My first impression was 7 because the box looked like it had too many open spaces. The meat itself appears to have too much sauce on the top of the brisket as well as the burnt ends.

Bobby Whitefield

Neat box. Good sauce, Meat may be slightly undercooked and the slices are a little thick, but overall an attractive and well presented entry. I give it an 8 or possibly a 9.

Frank KCBS MCBJ CTC

Score/Reasons = 8. Looks great, but would like to see the bark on the slices darker.

Suggestions/Comments = Lose the garnish embellishments in the corners. I don't believe you will get called on a marked box, but it is a meat contest.

Score/Reasons = 8, the slices have too much glaze which makes the meat look slimy. Beside that, the box looks pretty good.

Suggestions/Comments = Just use less glaze and let the meat stand on its own.

Score/Reasons = 9, looks moist and appetizing - almost gave this an 8,but gave it to the team

Suggestions/Comments = spread the slices apart and show the face of the slices better to make the appearance look better (not a judging factor)

Dennis M

Score 9
Suggestion> The slices look thick which is sometimes an indication that the meat is overcooked. The burnt ends are a nice addition if they are tender. My experience is that burnt ends tend to reduce the tenderness score.

8 - Nice presentation, the slices are a little pale in color. Consider putting more meat in the box.

8....Meat looks under cooked. Bark on slices and money muscle doesn't match. Ends cut off.

Money Muscle may be over sauced. Lettuce in the corners are distracting. Over garnished.

I would score this box a 9. You can tell there was great care taken when putting this box together.
Suggestion: try to trim your brisket flat rounded before cooking to get an even shape on both ends of the slices.

CBJ - score 8 Pluses- are nice attractive layout. I like the confidence shown with the ends as well as the slices. Ends appear to have a nice bark. Minuses- the color on the slices should be darker (more bark) on the top. The sizes of the ends are not even.

8

slices a little light on color
ends look great

    Purpose

The purpose of BBQ Critic's JudgeMyBox section is to provide feedback to competition cooks. Certified BBQ Judges who visit this site will score the photo of a contest box (using KCBS judging rules) and may optionally leave a comment explaining their score.

The idea is to allow the cook to get inside the mind of a judge (judges do have varying opinions) so they can use this information to help improve scores on APPEARANCE.

In turn, the BBQ Critic editorial team will provide feedback on some judge scores and commentary  that stray from the KCBS rules. This will help our judges become better judges and keeps everyone on the same page. Judges may also encounter some fun challenges at times (click for example).

Comments about boxes or judges scores may be discussed in our online FORUM in a respectful manner.

Please be mindful that scoring photo boxes may not be as accurate as scoring the box in person. Lighting, glare, angles, etc may affect the overall score. Judges also have more time to stare at your box, so that means we may get very detailed about the good and the bad.

Have fun, judges! Oh, and cooks? Please send us your boxes. We love to judge Q here at BBQ Critic. ;-)
