Score: 8--nice full box. simple but effective presentation of the brisket. nice even, careful cutting and placement. shows the cook took pride in the entry.

Suggestion: However, as the meet appears dry--a small spritz or light brush of their mop or sauce would have made this a perfect box for me.

8 - That's one full box of brisket - but there is something a bit too bland and gray about it for me - it may be just the photo quality...

8 - Nice looking box except that the meat looks dry. Try lightly brushing some left over juices on the meat.

I give this one a 9. Good lokking meat, and it is a full box. Just want to try a slice of it.

Score/Reasons = 7, May be higher in person. Bark is a bit light and the grain in the slice looks very tight. Could be from the knife used, but the tight grain leaves the impression that the meat may be tough.

Suggestions/Comments = Too much meat in the box (can there be too much?) - less meat will give a better appearance.

Nice uniformity and color of the pieces, but they look a little dry. Nice presentation but there's nothing there to differentiate it from other entries.

Score 7. What a waste of placing garnish in the box. The problem with this entry is the box is overload, the meat appears dry, and the back slices were cut very roughly. I would suggest the cook consider reviewing the slices, after cutting and place less slices in the box and allow the garnish to frame the entry and a light coating to allow the meat to appear moist.

Suggestions/Comments: While I am sure the table captain would appreciate the "extras", overfilling the box doesn't necessarily make it better. Perhaps a bit less in the box would enhance the product by allowing it to stand out against the hidden garnish.

Score/Reasons: 7 - I like the full box. The meat, itself, has a flat, lackluster appearance in general. It needs some "pop." Maybe it's the photo. The little meat tags prevealent at the edges and ends detract from the appearance. I don't miss the garnish.

Suggestions/Comments: Spritz the meat to put a glisten on it to brighten the appearance. Trimming the meat tags will tidy up and improve the slightly shaggy look in numerous places. Don't be afraid to consider trimming off the ends entirely to make for a quite manicured appeance. Any judge who deducts for the lack of burnt ends needs to be scolded...whether to have or not is the cook's discretion, and not the judge's preference.

this cook is proud of his/her brisket just by the amount o meat in the box. The peices are enenly cut and look moist nad delicious.
I won't mark them down because there are no burnt ends in the box.

Score 9 - I like the way the cooker displayed the meet with minimal greenery. Additionally it has plenty of meat for the volunteers and table captains.

Score/Reasons: 9/Nice color, nicely placed in the box.

Suggestions/Comments: Take a little extra time to clean up the small bits of loose meat and trim uneven pieces off.

Box is overloaded. Pick the best slices, use more garnish
and a little sauce to bring out color.

Wow, that's a butt load of brisket there! Almost too much, the front piece which draws all the attention is not a full,even, best looking slice. Your cuts are a smidge ragged causing little nubs.
It looks pretty dry, a dip in some au jus before boxing would make a world of difference.
Your entry is still a very good 8!

Score/Reasons = 9, can't really tell if this looks dry or not, as there is no sheen, but the meat looks excellent to me.

Suggestions/Comments = FULL BOX!!! that's nice! Is that garnish peeking out on the right side? WHY??? Doesn't count for score, but WHY have garnish in a box when you can't see it? (platform to raise the meat?)

Score/Reasons = 7 Looks a little dry, the front 2 piece don't seem to go with the flow. Clean off all the little scraggly pieces.

Suggestions/Comments = Either use no garnish or nicely frame the meat.

8 - I am not sure if the camera angle and lighting created dark areas, I would have liked to have seen a better picture. The first piece should not have been included. If it doesn't enhance the presentation then leave it out.

Score/Reasons = 8, The meat just look dry. Nothing here that makes be want to really taste it. Almost want to take a deep breath before tasting.

Suggestions/Comments = Add some au jus to the meat. I do not mean the canned stuff or the bouillon liquid. These just add an off taste to the meat. Add some on the juices the meat was cooked. it.

Score/Reasons = 9. Nice box. You might get some 8s from really picky judges from the loose bits on the right side, towards the back. Uniformity is spot on! Watch out for brisket looking dry. This looks borderline ...

Suggestions/Comments = Extend your greenery up the sides of the box. It's all but hidden. Twelve equal slices is awesome, even though we don't judge quantity (unless less than six samples), this might help subconsciously.

BBQ Critics: Compare your scores with other judges. If you are way off from the average of the combined scores, take a second look and see if there is room for improvement. After reading comments/scores, ask yourself, "Did I score too high? Did I score too low?" Always look for ways to improve. :-)

    Purpose

    The purpose of BBQ Critic's JudgeMyBox section is to provide feedback to competition cooks. Certified BBQ Judges who visit this site will score the photo of a contest box (using KCBS judging rules) and may optionally leave a comment explaining their score.

    The idea is to allow the cook to get inside the mind of a judge (judges do have varying opinions) so they can use this information to help improve scores on APPEARANCE.

    In turn, the BBQ Critic editorial team will provide feedback on some judge scores and commentary  that stray from the KCBS rules. This will help our judges become better judges and keeps everyone on the same page. Judges may also encounter some fun challenges at times (click for example).

    Comments about boxes or judges scores may be discussed in our online FORUM in a respectful manner.

    Please be mindful that scoring photo boxes may not be as accurate as scoring the box in person. Lighting, glare, angles, etc may affect the overall score. Judges also have more time to stare at your box, so that means we may get very detailed about the good and the bad.
