BBQ Critics: Participants in COBJ MUST USE THE FORMAT BELOW WHEN SCORING BOXES or your post will not count toward your COBJ qualification.

EXAMPLE (not pertaining to the box live now):

Score/Reasons = 9, reasons such as nice meat looks moist, etc

Suggestions/Comments = Here you can add suggestions or comments that DID NOT AFFECT YOUR SCORE.

Scores will be published as a group when judging is done. Please compare your scores & comments with other judges. If you are way off from the average of the combined scores, take a second look and see if there is room for improvement. After reading comments/scores, ask yourself, "Did I score too high? Did I score too low?" Always look for ways to improve. :-)

Thanks!

9 - holler if you need a taste tester :)

Suggestion: Others may not give that score based on a couple of items:
- I too have gotten "specks" on the slices. Mine was fixed by straining the juices before painting/soaking the slices
- try to arrange your burnt ends so that they appear uniform in appearance; e.g. the front left shows the side whereas all others show the top
- clean up the garnish appearance; notice the left side shows white and the right side shows green

Score = 9

Nice clean box of brisket. Similar sizes for both chunks and slices and not too much sauce. Good job!

Score= 8

Burnt ends too dark and not as appealing if they were a tad bit lighter. Like the size and arrangement of slices

bruce nickels
6/13/2014 05:48:11 am

Score/Reasons = 8 looks great, nice arrangement

Suggestions/Comments = I like the burnt ends, I like the char on the outside of the slices. Looks slightly dry/over cooked, but still good. i can see the rub. make the finishing rub finer ground, or spray with liquid after applying finishing rub.

8 - I wanted to give a 9 here, but the sauce makes the meat look a little gritty.

8. good layout, even color, look moist. However with so many slices its hard to aline them all equally. Additionally, the front left cube has fallen on its side.

9 - I started with a strong 8 but since we don't use decimals, I had to mark it up. Once suggestion, clean up the burnt ends, make the presentation "pop" when you open the box. I like the slices, you can see the shape of the meat.........good job.

8 - Very nice looking box, Sauce is uneven and some of the burnt ends looked ragged, like they were torn not cut.

That there is a 9 - great color on the slices, the burnt ends look to have a great texture - slightly crispy. I could hardly wait to sample that box...

7....Meat looks dry. Nice bark on the Burnt Ends but a couple on the left side need to be cleaner cut. Sauce looks grainy.

To many slices in the box.

Score/Reasons: 8 - great color, nice layout, plenty of meat. Slices look slightly dry. I acknowledge that it could be the photo, so it could be a 9 in person.

Suggestions/Comments: A bettter photo or more moist meat is encourage.

Score = 9, Nice looking bark on the slice and burnt ends.

Comments: I don't feel that sauce should ever be put on brisket slices. I didn't score down, because it was light and even.

Erle Smith

8 - Another very solid entry with a generous offering of meat. The burnt ends look like they were returned to the smoker and finished well. The brisket has a very good bark, but may be a touch dry.

Suggestion: look at he righ hand side of the slices, perhaps a little more even saucing would have improved the presentation?

Very good looking box.

Box 174makes my mouth water, nice sheen , looks moist , burnt ends look tasty . My score is a 9

9 - samples look good enough to eat . I wouldn't push it away.

Symmetry is off a tad 10 burnt ends - 12 slices. Could be framed better, showing garnish more on bottom and right than left and top, but that could be camera angle.

9. Looks great! Maybe could do a little more even trimming on the slices.

9- Good looking brisket. Nice looking burnt ends and good color on the slices.

Comment: Hard to tell from the picture due to angle, flash, lighting etc... The meat looks like it might be a little dry, I still went with a 9 based on judging what is presented.

Score/Reasons = 9, Looks dad-gum good to me! Probably just the photo, but looks just a wee bit dry to me.

Suggestions/Comments = try to frame the meat better with the garnish (not a scoring comment), and the first BE on the left front needs to be turned to have all face the same way (away from the front).

Score = 9 Nice arrangement with burnt ends on the sides.

Frank KCBS MCBJ CTC
6/17/2014 01:21:21 am

Score/Reasons = 9. Not perfect, but it appears excellent. Nice bark, lightly sauced.

Suggestions/Comments = Some perfectionists will mark down due to the misplaced BE front left and the bits on the slices.

Score/Reasons = 9, The meat has good color and appears to be moist. I also like the crust on the top.

Suggestions/Comments = The only thing is maybe make sure the slices are even. It appears the slice were to angle out which if slightly did on the right but not at all on the left.

8 - I do like the way this box looks, but, may I suggest having the same number of slices to burnt ends ratio. My eyes picked up the imbalance immediately .

9 - a lot of meat in that box. Looks good. Burnt ends look great. If I was the table table for that box I'd be very happy.

    Purpose

The purpose of BBQ Critic's JudgeMyBox section is to provide feedback to competition cooks. Certified BBQ Judges who visit this site will score the photo of a contest box (using KCBS judging rules) and may optionally leave a comment explaining their score.

The idea is to allow the cook to get inside the mind of a judge (judges do have varying opinions) so they can use this information to help improve scores on APPEARANCE.

In turn, the BBQ Critic editorial team will provide feedback on some judge scores and commentary  that stray from the KCBS rules. This will help our judges become better judges and keeps everyone on the same page. Judges may also encounter some fun challenges at times (click for example).

Comments about boxes or judges scores may be discussed in our online FORUM in a respectful manner.

Please be mindful that scoring photo boxes may not be as accurate as scoring the box in person. Lighting, glare, angles, etc may affect the overall score. Judges also have more time to stare at your box, so that means we may get very detailed about the good and the bad.

Have fun, judges! Oh, and cooks? Please send us your boxes. We love to judge Q here at BBQ Critic. ;-)
