BBQ Critics: Participants in COBJ MUST USE THE FORMAT BELOW WHEN SCORING BOXES or your post will not count toward your COBJ qualification.

EXAMPLE (not pertaining to the box live now):

Score/Reasons = 9, reasons such as nice meat looks moist, etc

Suggestions/Comments = Here you can add suggestions or comments that DID NOT AFFECT YOUR SCORE.

Scores will be published as a group when judging is done. Please compare your scores & comments with other judges. If you are way off from the average of the combined scores, take a second look and see if there is room for improvement. After reading comments/scores, ask yourself, "Did I score too high? Did I score too low?" Always look for ways to improve. :-)

Thanks!

7 or 8 - Hard to tell from picture.

Ike, KCBS CBJ

Score: 7

Contrast between the dark brisket (picture??) and the light colored lettuce doesn't help this presentation.

I would give this a low 8, with a better photo, maybe a high 7. Lows very odd, on the garnish. Hard to tell what the garnish is. Meat is all different sizes, and thick, not well placed in box. Looks like they ran out of time.

The picture is way too dark to really tell what the entry looks like.
I detect some shine on the burnt ends, but the slices did not photograph very well.
Score 8

7 - Unfortunately the score has probably more to do with the photo quality here. The entry is just very dark.

Erle Smith; KCBS CBJ & CTC
7/16/2014 01:21:25 am

7 - A good entry that includes burnt ends showing confidence. The slices could be more uniform. The lettuce is a little light in color, could have been more effective with a deeper green. Perhaps for cilantro or parsley as the top layer of the garnish next time? Finally I can't really get a feel fro the moisture from the picture, perhaps its an aging judge's eyes. A good entry that you can improve on I think.

Mike Cannon

7 - not appetizing.

Jim H - CBJ SBN KCBS
7/16/2014 01:47:05 am

Score/Reasons = 8/Bad picture so it's difficult to tell, but it looks like there are some loose bits on top of a couple of the slices. With a better picture, maybe that would not be the case.

8. Very nice arrangement. Good pattern for slices. Photo does not do it justice and so they look dry. Is the garnish really cabbage - its hard to tell in the photo? If so the box would be a DQ in my BBQ association.

Score = ??? This photo is so bad I can't see the meat well enough to score it.

Poor quality photo makes this box difficult to judge.

John - KCBS / MCBJ, CTC, Rep; MBN & MIM Judge
7/16/2014 03:19:05 am

Score/Reasons: 7 - meat looks dry and lifeless. The burnt ends are very dark. Maybe it's caused by the photo's very soft focus, but I can only judge what I see, rather than what I WANT to see.

Suggestions/Comments: The slices would present better if they were a bit more uniform in length. I'm not a judge who demands "manufactured" precision in a presentation, but a bit more uniformity, particularly in slice length, would make for a better appearance & presentation. For me, a bit lighter color on the BE's would be helpful, too. I know they're BE's, but they shouldn't be literally "burnt." Judging from the photo only, these may be literally so.

6......Slices look dry and over cooked. Burnt ends look charred. Different size slices.

The chopped ice burg lettuce doesn't help the meat appearance. Put some moisture on the meat. Do a better job lining up the slices.

6. Picture is not very good, but does not look very appetizing from the pic.

8 - Placement could be more uniform and centered. Picture out of focus so maybe it looks better on the table...

Score/Reasons = 6 Not a real clear picture. It looks like a rare steak. Edges look jagged.

Suggestions/Comments = Burnt ends look like the cook was trying to make a money muscle, not burnt ends. While iceberg lettuce is legal, it does nothing for this entry. Would have been better to had no garnish at all.

william holladay ( scba)

7 - Poor picture quality makes it difficult to judge, but top slice is longer than the rest, and the shredded iceberg lettuce is a poor choice for garnish. Might be a higher score if picture quality was better.

Dennis M

Score > 8
Slices appear to be thicker than most. When I see this I tend to think that the brisket has been overcooked.

Ed KCBS MCBJ
7/17/2014 02:22:10 am

You should present slices as they are cut from the brisket so they look even. These slices are differnt lenths showing less care in presentation. Because the pic is so poor it's hard to tell about the sauce (looks poured on) or what the square ends look like.
I guess I'll score it average 6.

Deb KCBS MCBJ/CTC

Score/Reasons: Score 7; Reasons: The meat appears very dark and overcooked.
Suggestions/Comments: This photo is very poor and doesn't do anything to enhance the appearance of the meat, but the fact remains that we are to judge what is put in front of us. A side note: If the cook had another option other than shredded lettuce, it might help the color of the meat to "pop" (I didn't discount the score for the garnish).

Score= 7

Burnt ends appear too dark , slices are not uniform in length. Photo is very burley and hard to see if it was cooked all the way.

jaja01 KCBS MCBJ CTC

Score/Reasons = 7, the meat looks very dark (may be picture). The slices on brisket should be the same length.

Suggestions/Comments = Next picture, be sure the lighting is the best it could be. Cut the slices so they are the same length.

Eric CMBJ
7/17/2014 10:28:12 am

Score/Reasons = 7, Burnt ends look too charred and like they will not taste good. (The picture is so low-res that it's difficult to give it a better score since it's hard to see any details. Sorry - just being honest Herb.)

Suggestions/Comments = Drop the sliced white lettuce garnish. It may be there to keep the meat from sliding around, but it detracts from the overall look since it's so white. It would be better to go with a more traditional garnish or just leave it off. I can't offer any more since the pic is so blurry.

Score = 7

Maybe an 8 in person as the darkened picture does not do your entry justice. Cannot see the meat real well, but the slices look to be un-ordered; e.g. the second slice from the top appears to be shorter than all the other slices.

I do like how you trimmed the flat so that the slices fit inside the box without having to trim the edges.

7 on appearance
1. Burnt ends do look burnt. Also could possibly have a foreign object on the third piece from the left, possibly foil.
2. The slices are not symmetrical in size and shape. Need a sharper cut.
3. Do not like the globs of sauce on the slices.
4. Do not like the light color of the iceberg lettuce. Prefer something darker. I know we don't judge the greenery, but since it is there.

7 on appearance
1. The burnt ends really look burnt. Also not sure what it is, but looks like a piece of foil on the third piece from the left.
2 the slices are not symmetrically even. Pieces are not the same size and shape. Also looks like the sauce had been globbed on to the slices.
3. Not crazy about the iceberg lettuce. The color is too light, need something darker, especially with the darker meat. But we are not supposed to look at the greenery, but since it is there..... That is my thoughts.

steven - CBJ/KCBS

being such a poor picture, I would give it a 5 , and the iceberg lettuce
having such a light green color, does not compliment the rich darkness
of the meat.

    Purpose

The purpose of BBQ Critic's JudgeMyBox section is to provide feedback to competition cooks. Certified BBQ Judges who visit this site will score the photo of a contest box (using KCBS judging rules) and may optionally leave a comment explaining their score.

The idea is to allow the cook to get inside the mind of a judge (judges do have varying opinions) so they can use this information to help improve scores on APPEARANCE.

In turn, the BBQ Critic editorial team will provide feedback on some judge scores and commentary  that stray from the KCBS rules. This will help our judges become better judges and keeps everyone on the same page. Judges may also encounter some fun challenges at times (click for example).

Comments about boxes or judges scores may be discussed in our online FORUM in a respectful manner.

Please be mindful that scoring photo boxes may not be as accurate as scoring the box in person. Lighting, glare, angles, etc may affect the overall score. Judges also have more time to stare at your box, so that means we may get very detailed about the good and the bad.

Have fun, judges! Oh, and cooks? Please send us your boxes. We love to judge Q here at BBQ Critic. ;-)
