BBQ Critics: Participants in COBJ MUST USE THE FORMAT BELOW WHEN SCORING BOXES or your post will not count toward your COBJ qualification.

EXAMPLE (not pertaining to the box live now):

Score/Reasons = 9, reasons such as nice meat looks moist, etc

Suggestions/Comments = Here you can add suggestions or comments that DID NOT AFFECT YOUR SCORE.

Scores will be published as a group when judging is done. Please compare your scores & comments with other judges. If you are way off from the average of the combined scores, take a second look and see if there is room for improvement. After reading comments/scores, ask yourself, "Did I score too high? Did I score too low?" Always look for ways to improve. :-)

Thanks!

If you trim one end you should trim both and also the fat imho

9 - Excellent looking brisket. Moist, great color. Nice job.

7-slices not uniform

Erle Smith, KCBS CBJ & CTC

7 - Slices are very close to same size and are arranged in an inviting way. The sauce enhances the appearance making it look moist. The bark could have been a little darker for my tastes, but does look very good.

8. Had the fat not been so thick and loose I would have said 9

Enrico, CBJ KCBS

7, because chunck of fat in the first slice and probably in all the slices and becauce slices are not even

Score/Reasons: 9 - Good looking brisket box. Meat looks moist & inviting.

Suggestions/Comments: Trim the right ends of the slices. Take more care with aligning the slices evenly.

Take that extra 20 seconds to line up that left side perfectly and remove the crumbs. That shows me as a judge you really are trying for that 9. Also, not a fan of the sloppy fat line, but this one does look pretty well rendered.
I see a very good 8.

8.....Fair bark. Meat looks moist. The edge of the slices aren't sauced.

Some judges will mark down because of the layer of fat on the bottom. I wouldn't.

Score 9
The pieces look fairly evenly cut, moist and shiny. Unfortunately there are no burnt ends

Score/Reasons = 9, Nice box, the meat looks moist. I like the strip of fat on the bottom edge of the slice, fat is flavor.

Suggestions/Comments = Not much to say, looks good. One thing to think about, even though I like the fat, some judges may to turned off by it.

Vern MCBJ/KCBS

9 - Looks nice and moist. Some judges my score down for the fat vein...I could have scored down for the meat not being centered. The garnish gap on the left is wider than the right...Good Job!

score / reason 8 fat strip sticks out like sore thumb, other wise the slice are the same size and coloring.

Mark MCBJ/KCBS

8 looks moist almost gave it a 9. But, the left side had a chip of meat on one of the slices. I know it's being picky.

Score/Reasons = 7, untrimmed fat layer and uneven right side.

Suggestions/Comments = Box looks great in color and super moist, but the fat layer on the bottom needs to be trimmed and the right side of the slices could use a cut just like the left side has.

8. Hard to not look at the large piece of fat at the bottom of the front slice.

Score/Reasons = 9, nice meat looks moist, good color, makes me want to dive in!!!

Suggestions/Comments = I like the fat on the bottom! Some judges might not, but that is where the flavor is! It has mostly rendered out so what remains is NOT too much - just enough.

Frank KCBS MCBJ CTC

Score/Reasons = 9. Looks delicious.

Suggestions/Comments = A closer trim of the fat might be considered. Some judges may mark down for too much fat.

8. Nice layout and arrangement. Look moist. The ragged ends on the right side of the box detract from the good knife skills shown on the left side.

What happened to the left side of the slices? It appears to be cut off. Also (kinda nit-picky now), but the third slice from the front has a piece of cut brisket on it. Take care on how you "paint" the jus on the slices. The first slice looks like it was not covered evenly.

Appearance-7
Make sure and trim fat from each slice, at the bottom. You may say some judges like that fat on the bottom. But a lot of them don't. The judges that don't like it will score you down. But no judge will score you down because you didn't leave the fat on. Why take a chance?

I would rate this a 6. It lacks color smoke ring and loos dry

9- Great looking box!! Brisket appears to be moist and looks tender.

Comment: Perhaps trim the right side of the slices to a straight edge. Someone might deduct an appearance point for that.

Strong 8.
Overall I like this box with nicely sauced pieces that look good in the box. Just do not like the fat cap on the bottom of the front piece. Should have been trimmed to give it a cleaner appwarance.

8- Brisket slices are uniform but neatly trimmed on left and untrimmed on right. The untrimmed fat on the bottom slice takes away from the appearance. other than that, great box.

8.

Suggestions/Comments: Perhaps trim the fat portion from the bottom of the slices.

score 8. Well placed meat and garnish. Meat looks moist. Smoke ring present.

Is that some sauce on the right edge of the box? and injection holes in meat?

Score/Reasons = 8 Nice color moist.

Suggestions/Comments = Trim the bottom flap. Also if trimming and squaring up one end, might want to square up both ends.

    Purpose

The purpose of BBQ Critic's JudgeMyBox section is to provide feedback to competition cooks. Certified BBQ Judges who visit this site will score the photo of a contest box (using KCBS judging rules) and may optionally leave a comment explaining their score.

The idea is to allow the cook to get inside the mind of a judge (judges do have varying opinions) so they can use this information to help improve scores on APPEARANCE.

In turn, the BBQ Critic editorial team will provide feedback on some judge scores and commentary  that stray from the KCBS rules. This will help our judges become better judges and keeps everyone on the same page. Judges may also encounter some fun challenges at times (click for example).

Comments about boxes or judges scores may be discussed in our online FORUM in a respectful manner.

Please be mindful that scoring photo boxes may not be as accurate as scoring the box in person. Lighting, glare, angles, etc may affect the overall score. Judges also have more time to stare at your box, so that means we may get very detailed about the good and the bad.

Have fun, judges! Oh, and cooks? Please send us your boxes. We love to judge Q here at BBQ Critic. ;-)
