BBQ Critics: Participants in COBJ MUST USE THE FORMAT BELOW WHEN SCORING BOXES or your post will not count toward your COBJ qualification.

EXAMPLE (not pertaining to the box live now):

Score/Reasons = 9, reasons such as nice meat looks moist, etc

Suggestions/Comments = Here you can add suggestions or comments that DID NOT AFFECT YOUR SCORE.

Scores will be published as a group when judging is done. Please compare your scores & comments with other judges. If you are way off from the average of the combined scores, take a second look and see if there is room for improvement. After reading comments/scores, ask yourself, "Did I score too high? Did I score too low?" Always look for ways to improve. :-)

Thanks!

7 - Meat is uneven and just looks sloppy. I know we don't judge the smoke ring or lack thereof, but this smoke ring looks painted on and actually takes away from the appearance score.

I would rate this a 7. A bit uneven in color

Doug KCBS MCBJ & CTC

Score = 8, front slice looks like it has some smudges of sauce on it. Left edge of the slices looks like they were just broke apart rather than cut. That edge looks ragged. The neater, the cleaner the higher score will be.

Score = 7

Meat has ragged edges and cut marks....just isn't anything special.

Score 8
The pieces got a nice smoke ring. They should have been brushed with some au jus. Unfortunately no burnt ends

8. Good layout, nice arrangement. Look moist. However, middle slice is out of alignment a tad.

Erle Smith, KCBS: CBJ / CTC

8 - Very good entry. Bark is dark and inviting. The slices are very close in size and appearance. The moisture looks okay, but appearance would have been improved with sheen from a thin coating of sauce. This is a very good entry.

Score/Reasons = 7. You have some nice color to the bark. That first piece looks a bit dry and not presented at its best angle. A 90 degree cut against the grain will give a better bite. This looks a bit off.

Suggestions/Comments = Make that first piece pop by hiding your ragged look at the bottom in the garnish and clean it up a bit with even saucing. Flat leaf parsley does not give a neat look and can be harder to work to your advantage.

Score/Reasons = 7, looks a bit dry and ragged cuts. still looks kinda appetizing, even with the black bark on some slices.

Suggestions/Comments = work on the garnish (not a scoring factor) to make it more evenly covering the box bottom and sides.

Larry MCBJ

7 - First piece looks dry, even-up the slices, and remove the goobers.

Vern MCBJ KCBS
8/7/2014 06:31:16 am

7 Looks overcooked and crumbly. Slices should be uniform. The top slice has a completely different grain and less bark than the others. Looks like it could be tasty as it does look moist...

cogeo

Score = 7 (possibly an 8 in person)

Can't quite place it, but the first slice looks "out of place". Maybe it is presented backwards or is it just the angle of the picture? The remainder of the slices you can see the smoke ring and the bark. If judging this box, I would be grabbing one of those slices. Also, I am not a big fan of having to cut off the ends to fit the slices into the box.

7-slices need to be more uniform

william holladay (scba)

8 - Slices are uniform in size, the dark rim on top adds to appearance, but first slice takes away from the rest. It's not showing the same dark rim as the other slices, looks dry, and looks to be turned backward from the rest.

9 - Great box of brisket. Nice moist appearance.

Score/Reasons = 6, dry looking and cut unevenly.

Suggestions/Comments = Clean cuts would help. Consistent, symmetrical slices would look more appealing. Color looks great.

8 - The brisket looks like it has good flavor - which makes me want to snatch a piece - but the front piece (turned the opposite way of the others?) looks like it crumbled off at the bottom - which makes me think it's a bit over done.

Enrico BBQness, CBJ KCBS

9.
The box looks good to me. Initially look dry, but enlarging the pic I could check it's not.
It could be possible that some CBJ score down due to uneven slices. Some bigger than others. Also the edge in first slice looks torn, not neat.

8....Nice bark. Meat look a little on the dry side. Ragged cuts.

Take more care in arranging the slices. Spray the meat to give it some shine.

Little raggedy around the edges but looks good enough to eat.
Very Good 8 here.

7- Edges look rough; could try for neater slices and more uniformity in the size and shape of the brisket slices. The front slice appears dry.

Gives the impression of a rushed box; spend a little time on developing the presentation and it will pay off on the appearance scores.

Scott Mc- KCBS, MIM, MBN

Score/Reasons = 8 Nicely arranged box

Suggestions/Comments = May be photo but first slice looks dry

Jean CMJ
8/8/2014 04:07:53 pm

7 - meat itself looks very nice, however, the trim work on the meat is very jagged and sloppy. I think you need a new knife or sharpen the one you use.

Dennis M KCBS CBJ CTC
8/12/2014 09:56:00 am

Score = 8

Slices look ragged. They appear to be from different briskets or from different parts of the brisket.

Mark Anderson
8/17/2014 01:48:14 am

Score/Reasons = 7, uneven placement of slices, not neat.

Suggestions/Comments = Try to get all 6 slices in a row from the flat. The slices looks like they came from different areas. The first slice is nothing like the second slice.

Bob CBJ/KCBS
8/18/2014 12:17:56 pm

Score 8. Looks moist.

Suggest neater slicing at the ends.

    Purpose

The purpose of BBQ Critic's JudgeMyBox section is to provide feedback to competition cooks. Certified BBQ Judges who visit this site will score the photo of a contest box (using KCBS judging rules) and may optionally leave a comment explaining their score.

The idea is to allow the cook to get inside the mind of a judge (judges do have varying opinions) so they can use this information to help improve scores on APPEARANCE.

In turn, the BBQ Critic editorial team will provide feedback on some judge scores and commentary  that stray from the KCBS rules. This will help our judges become better judges and keeps everyone on the same page. Judges may also encounter some fun challenges at times (click for example).

Comments about boxes or judges scores may be discussed in our online FORUM in a respectful manner.

Please be mindful that scoring photo boxes may not be as accurate as scoring the box in person. Lighting, glare, angles, etc may affect the overall score. Judges also have more time to stare at your box, so that means we may get very detailed about the good and the bad.

Have fun, judges! Oh, and cooks? Please send us your boxes. We love to judge Q here at BBQ Critic. ;-)
