BBQ Critics: Participants in COBJ MUST USE THE FORMAT BELOW WHEN SCORING BOXES or your post will not count toward your COBJ qualification.

EXAMPLE (not pertaining to the box live now):

Score/Reasons = 9, reasons such as nice meat looks moist, etc

Suggestions/Comments = Here you can add suggestions or comments that DID NOT AFFECT YOUR SCORE such as garnish or smoke ring.

Scores will be published as a group when judging is done. Please compare your scores & comments with other judges. If you are way off from the average of the combined scores, take a second look and see if there is room for improvement. After reading comments/scores, ask yourself, "Did I score too high? Did I score too low?" Always look for ways to improve. :-)

Thanks!

Great looking box. I'd give it a 9.

Score = 9.

This is a great looking box of brisket! Wish I could sample it!

Score/Reasons = 9, an perfect example of what a 9 (excellent) brisket box is.

Suggestions/Comments = There is nothing that I can add to this to make it better. Stuff in an extra burnt end in for the volunteers?

Jim Perry

Score/Reasons = 8, The burnt ends look like an afterthought. I would remove a couple slices and make your chunks larger.

9, barely
Klingon on middle slice really catches the eye. Work on tidying up just before you close the box

Wayne KCBS / CBJ

Score/Reasons = 9. This entry has great balance, color and appears to be nice and moist. Wonderful presentation on the slices and the burnt ends, as they fill the box right up. It makes me want to dig right in.

Comments: Slices 5, 7 and 8 have distracting objects that could have been plucked off with tweezers. I'm hoping the light object on slice 8 is a parsley stem and not something foreign.

Larry MCBJ

9 - Looks moist, nice balance, presented well.

Recommend removing the excess small pieces leftover from slicing. Just makes the box look neater...

Score/Reasons: 8 - Lagal box, but slices look dry. In addition, the slices are not as untiform as they could be. BE's look great.

Suggestions/Comments: Use slices that are unform in shape and line them up that way. Omit the non-conforming slices. Put a glaze or moisten the slices to make them look moist.

Hank KCBS/CBJ

Score=8

Could be a 9 if the all slices look as clean and neat as the first four. Burnt ends look terrific.

GregG KCBS/MCBJ, CTC
4/29/2015 05:56:09 pm

8 - Great looking brisket. Appears moist and I'd love to try it.

Suggestion: Two samples have a dark area at the top of the slice. Don't know if they are injection spots or loose bark. For better visual impact and uniformity...leave those slices out.

Score/Reasons = 9, great presentation.Meat looks juicy.

Suggestions/Comments = This is what I like to see for a brisket box.Maybe could of gone with one less slice of brisket?

I think this is a fine looking box. the meat may be a little over done, but I would save that till I tasted it. 9

Score/Reasons= 9 Good looking box. Uniform and well balanced.

Score/Reasons = 8, I can see a light sheen, but the cracking in the slices makes the meat look a bit dry. BEs look great from this angle!

Suggestions/Comments = why put 10 slices in the box when the 7th one is discolored? Leaving that one out would have made the box look better (NOT a scoring factor). Good framing of the garnish (AGAIN - NOT a scoring factor).

Doug KCBS MCBJ & CTC
4/30/2015 02:12:33 am

Score = 9, Great looking brisket box. Nice color to the bark, slices all look uniform.

Comment: the only negatives I have is there are some "meat crumbs" on the face of the slices and they look a little dry. This is not enough to bring the score down for me.

Vern KCBS MCBJ

9 - Nice box!

Dick-MCBJ/CTC
4/30/2015 05:44:06 am

Score 8. This entry would be presented better if the brisket slices were reduced. More is not always better. I would suggest that the cook pick the better slices and reduce the amount in the box slightly.

I would rate this an 8

Score: 8

A little more attention to evenly place the slices and maybe a spritz or brush of au jus would then garner a score of 9. Nice smoke ring and nice bark. I'd be willing to assist with your taste and tenderness scores.

Score/Reasons = 8, the slices are uneven and looks a bit dry.

Suggestions/Comments = try to make sure slices of the same size are placed in the box and add just a bit of sauce to make the meat look moist. Just a suggestion, most presents brisket in the manner presented here, Try to figure some way to present your box so it is eye catching and different than the common presentation.

I can't find anything wrong with this, looks like a 9 all the way. Nice cuts, meat looks just right, and always happy not to see a bunch of gravy slathered on the slices. Burnt ends are hard to see but will give benefit of the doubt that they're moist but not too wet.

Nice box, perfect symmetry and vibrant. Looks perfect…9

8= box lacks uniformity, burnt ends have a sauce, possibly too much, and slices don't have a glaze making them appear to be dry. Still looks tasty to me.

8. Spacing of the slices could be improved. Slices appear somewhat dry.

9....Nice box. Burnt ends have a nice bark. Slices look good.

The ten slices is a little to much. Sliced thin because of tough meat? Slices look a little dry. Spritz before closing box.

Ed KCBS MCBJ

Beautiful box of brisket, only thing to improve it would be to remove shards of crumble from tops of slices. Not enough to lose the
excellent 9.

Steve Rounds

Appearance 7- very full box, always good. Make the slices look a little more uniform. Smoke ring is really nice, but not supposed to used to judge the meat, but, as we all know, judges eat with their eyes, so, flaunt that smoke ring if it is good.

9 - Excellent looking box. looks flavorful. Evenly sliced. Great looking burnt ends.

    Purpose

The purpose of BBQ Critic's JudgeMyBox section is to provide feedback to competition cooks. Certified BBQ Judges who visit this site will score the photo of a contest box (using KCBS judging rules) and may optionally leave a comment explaining their score.

The idea is to allow the cook to get inside the mind of a judge (judges do have varying opinions) so they can use this information to help improve scores on APPEARANCE.

In turn, the BBQ Critic editorial team will provide feedback on some judge scores and commentary  that stray from the KCBS rules. This will help our judges become better judges and keeps everyone on the same page. Judges may also encounter some fun challenges at times (click for example).

Comments about boxes or judges scores may be discussed in our online FORUM in a respectful manner.

Please be mindful that scoring photo boxes may not be as accurate as scoring the box in person. Lighting, glare, angles, etc may affect the overall score. Judges also have more time to stare at your box, so that means we may get very detailed about the good and the bad.

Have fun, judges! Oh, and cooks? Please send us your boxes. We love to judge Q here at BBQ Critic. ;-)
