EDITOR'S NOTE

I originally posted this box accidentally as Pork - Box 25. Then everyone judged it as PORK. The cook emailed me and said this is actually BRISKET. So please re-judge this box now as BRISKET. Thanks!

UPDATE as of 6/29/11:

Here is some background information on this entry which is extremely interesting. When the BBQ team submitted this entry, they said, "A friend of mine from another team told me that a judge told him that someone had turned in a pulled brisket. He said it was fantastic, but marked it down because it wasn't sliced."

Here are the actual judge APPEARANCE scores for this box from the real competition:  9, 7, 9, 9, 8, 8.


It would be interesting to see how the judges here would have scored this entry in a real-life situation. Food for thought, indeed! -- BBQ Critic

1. KCBS certified and have judged MIM style as well as KCBS

2. Score - 5

3. Brisket box should contain full and properly cut pieces of brisket to let judge examin consistency, smoke ring, cleaning, etc. Brisket should not be shredded or pulled as is shown in the same manner as pulled pork. Shows team is likely hiding something, saucing, etc.....brisket is toughest category so if your going to do it do it right.

That's brisket??? Hmm.

Well, my pork score was higher for this box, but as a brisket box I'd probably score it a 4 to 5.

The "burnt ends" look gloopy and not very appetizing. The "shredded" pile in the back looks amazingly like stringy pork butt. Maybe I'm more of a brisket purist, but prefer my brisket in slices. My immediate thought on seeing this is that the meat was shredded with the grain of the meat, thus is probably going to be tough to chew.

Please bear in mind, though, the "SMOKE RING" is not to be considered in judging a KCBS Brisket box since it may be created artificially.

Your other comments are well noted. Though it is not forbidden to turn in brisket as "Shredded" or Pulled" in a KCBS contest, I do agree wholeheartedly it is VERY difficult to judge BRISKET in that form and I would discourage that type of turn-in.

I agree pulled brisket is legal. but your pulled
beef looks more like pork..
The burnt ends look mushy.
I would have to give you a 6 for appearance
I am not excited to taste the your brisket

Difficult to score; now that the secret ingredient has been revealed.
Hardly a KCBS worthy entry, more like something you'd see on a ghostly halloween buffet next to the lime-green spaghetti.

Brisket? Really? The color of the pulled meat is all wrong for brisket.

Anyway, I found two things interesting in this... When folks scored it as pork the appearance of the chunks was fine, but now that it is being scored as brisket the chunks are not acceptable? Not picking on anyone, but if the chunks don't looks good, they should be scored that way regardless of which meat it is.

As far as a score, probably 6. The box is nicely layed out and the garnish is pretty good, but as brisket it just doesn't jump out at me and make me want to eat it.

It's always difficult to judge a box when any facet of the presentation is not in the format we are used to, thus the low scores above. Variety is the spice of life but I would suggest not straying from the norm in any area of presentation/taste

I agree with Big_AL. It is difficult to judge a box when it is not what we are used to seeing. Sliced brisket always presents better and appears more appetizing. I would have to give it a 4 as well.

Brisket? Really? Now that I thought it was pork, and it still looks like pork to me, I can't give it a new score without bias - but, if something looks so much like pork that no one knows it's brisket, what kind of score would it get anyway?

Besides not being sliced brisket-which all KCBS scoring instructions are directed to, color and texture looks unappealing.

Ends look burnt and have no shine. Shreds look anemic and too strandy.

I would guess this to be a box that came to be when someone let their brisket cook too long to slice and was just trying to make the best of a bad situation.

KCBS CBJ x 5 yrs

Score: 6 (In person may even have downgraded to a 5 depending on how dry/moist it actually looked.)

It is a neatly arranged box and I don't believe it is against the rules to submit brisket in this form. However, in scoring for appearance, my first thought must be: Does it make me want to try it? I think not.
I am immediately suspicious as to "why" it is pulled or shredded. What's wrong? Could it not be properly sliced for whatever reason? It does not appear to be proper color for brisket.
My table was actually presented with a box similar to this at the last competition. It was a first for me. I think the general consensus was we had all taken off for this presentation for the same reasons.

It looks good I give it a 8 the burnt ends could use some improvement. The point is the best part and pulled is real good. It kinda bothers me as a cook that judges can't tell the differance between pulled brisket and pulled pork by looking at it.

This photo could be (and has been) mistaken as PORK. Bear in mind - this a PHOTO. It's not that judges can't tell the difference (obviously in a contest situation this would have been turned in as BRISKET). It would have smelled like BRISKET and tasted like BRISKET.

Even the actual contest scores reflect that some judges did like the appearance of the meat.

If anything, a cook should learn from this experience and realize that maybe pulling BRISKET isn't a good idea in a KCBS contest situation.

That, of course, is the final decision of the cook. ;-)

For brisket, it's not appealing looking. Pulled looks like a pile of worms and the burnt ends are so overly sauced I can't tell where one ends and the next begins. This presentation fails on several levels.

If presented with this and it being my first year, my first question would be is it legal. Once established the rules allows this, then appearance for me would be a 6 or maybe a 5.

As this would probably be the ONLY entry submitted this way, also allows to advertise who submitted the entry in this fashion.

Reasoning:

I could clean up the entire box by myself. I would like to see some small slices to do a pull test on, However, I love brisket this way and it is BY NO MEANS contrary to KCBS rules. The pulls go great on Doritos with some cheese and heated up in the microwave.. UM UM GOOD BRISKET.

This BBQ Critic Website/Forum is really cool. This Brisket Box is actually mine! Frankly, If I was presented only this picture, I would have thought it was pork. The fact is as one judge put it... It was actually over cooked and I tried to make the best of a bad situation. The color of the brisket was unusually amazing so at the last minute, I submitted it rather than taking a DQ.

As a judge in addition to being a cook, I find it very interesting that some judges feel that they also feel it necessary to understand what the cook is thinking or how they felt..... Judges are not asked to understand the thoughts or desires of the cooks behind the box they are judging. Moreover, before they get into the ring to be a "Judge" They should know the rules and abide by them. And know the difference between the different categories of meat!

Thanks for the compliment on the BBQ Critic site and for giving us the background on this box.

This is definitely one of the more interesting box submissions we have had so far.

I think it is important that judges cook in a competition first before they judge so they can understand the cook's side. This would help them become better judges indeed. :-)

    Purpose

    Please be mindful that scoring photo boxes may not be as accurate as scoring the box in person. Lighting, glare, angles, etc may affect the overall score. Judges also have more time to stare at your box, so that means we may get very detailed about the good and the bad.
