7 or possibly 8 when seen live

I would guess that the way they are fanned and if the contest was small/medium where they held the brisket boxes for a while. It will dry out and your score would be a weak 7

Personally, I like the parsley putting greens better, yes I know and reward the cooks for their time.

I'd give it an 8. My only comment is that all portions are not equal. It's not a big thing but enough that I knocked a point off. Otherwise it looks like a great entry.

Lovely symmetry. Easy to see the meat and really get a feel just from your eyes what it's gonna feel like.

The meat looks pretty appetizing; HOWEVER, there are a couple things that detract significantly from this being an excellent entry: The glob of fat showing on the first slice is a BIG turn-off! The fact that all slices came from the same hunk of meat doesn't help as much as hurt since no two slices are the same size - visually detracting from excellence. STILL, the meat looks pretty good!

7 - Above Average

Large area of fat on bottom slice.
Garnish could be improved to frame presentation better.

"Nice smoke ring" not considered in the score, but nicely done. The front slice sets the overlook of the meat off a bit. A straighter trim on the bottom of the slice might help. The slices appear to be a little dry. As a suggestion I would try to remove the black specs. I don't mind the different lengths of the slices but some judges may prefer slices of the same length.

Meat looks good, but in the photo, it looks like it might be a tad dry.

Good color to the meat.

Uniformity in the slices would get a higher score from me.

Tip-exposing less of the surface of the slice will help retain moisture and help conserve heat. Warmer meat tastes better than cold meat.

Score 9. Nice color and contrast to this box. Meat is not oversauced and shows the actual size of the brisket. It would be hard to find fault with the entry.

Nice looking brisket. I'd score it a 9 without the large piece of fat at the bottom of the front slice.

Yeah baby, no sauce or glaze crap. looks moist. Probably because,lo and behold, they left some fat on it! Not the 1/4" thick layer across the top with the rub on it that IMHO leads to perfect brisket, but I'd like to taste this.
Some judges are gonna dog this team's entry for iregular size slices and I'll bet we'll see responses griping about the fat.

    Purpose

The purpose of BBQ Critic's JudgeMyBox section is to provide feedback to competition cooks. Certified BBQ Judges who visit this site will score the photo of a contest box (using KCBS judging rules) and may optionally leave a comment explaining their score.

The idea is to allow the cook to get inside the mind of a judge (judges do have varying opinions) so they can use this information to help improve scores on APPEARANCE.

In turn, the BBQ Critic editorial team will provide feedback on some judge scores and commentary  that stray from the KCBS rules. This will help our judges become better judges and keeps everyone on the same page. Judges may also encounter some fun challenges at times (click for example).

Comments about boxes or judges scores may be discussed in our online FORUM in a respectful manner.

Please be mindful that scoring photo boxes may not be as accurate as scoring the box in person. Lighting, glare, angles, etc may affect the overall score. Judges also have more time to stare at your box, so that means we may get very detailed about the good and the bad.

Have fun, judges! Oh, and cooks? Please send us your boxes. We love to judge Q here at BBQ Critic. ;-)
