looks appealling, appears moist, nice bark, arranged with attention to detail....8

I would give this a 9. Nice bark, nice full box, but it appears there is some type of injection marking or meat staining just left of mid center of the slices on the front 5 slices. While it isn't a huge deal to me I know chatter at the judging table suggests that others do look at it. I would be proud to turn that box in.

Score 8
Looks moist,placed in box well.
Burnt ends are a little hidden. Remove chips of bark from slice surface, also chunk on right end of 6th slice.
Wipe edge of box, fill up the sides with garnish.

I'd give it a 9. The meat looks moist and tasty, the layout is well balanced, and overall presentation is well done.

Looks very edible to me.
9
only distraction is the ends could look more separate and saw marks.
poor pic

9. It's speaking to me on a cold winter morning saying "Eat me!".

Seriously, it's nicely presented and the meat looks delicous and moist. What more can you want from a box of brisket?

8 very nice, pieces 2,3,4,-5 have a "schmear" on them. parsley not an even border,(light in front )

Troy - bear in mind we do not judge garnish in a KCBS competition.

I give this an 8

Now this could be reflection of flash on camera but it looks like a few splotches of sauce in middle left. Also cannot tell by camera if the burnt ends are too burnt or heavy with sauce.

If you even those splotches of sauce out, I will most likely give it a 9.

It looks like they just misted this. It would probably not be so shiny once it got to the judges. I really like that this is not overtrimmed and hence has nice bark on the ends. Of course I'd always like to see a little fat but this looks like tasty stuff. Too bad the top of the picture is dark and you can't really see the burnt ends well. I'd liked to have judged this. Much more appealing to me than most brisket I have judged

give it a 9, let's start jugding!!!!!

I could get real picky and criticize a few minor points about eh meat but in the spirit of err on the side of the cook this box is a 9.

Todd- CBJ
1/9/2012 03:14:36 am

Scoring presentation I would go with an 8 for the fact that there is a little color blotchiness and the greens could be more uniform, although, when judging at a competition, I do my best to focus on looking/judging at the meat only. Virtual judging I take a different approach since it is the only "score".

BBQ Critic

Todd - we do not judge or factor GARNISH in scoring BBQ competition boxes - online or offline.

If anyone has a comment on GARNISH, please follow this format:

1) Give Score/Reason for score (excluding garnish comments)

2) SUGGESTIONS: Here you can bring up garnish and other advice you want to offer. It is always wise advice when you encourage the cook to make the garnish as perfect as possible in the box. Some judges do factor greens into the score, unfortunately.

Bottom line: Keep your garnish comments separate from your scoring/reasons comments. :-)

9 - Excellent

Nothing at all wrong with the box.

9 !!!! <<<Mouth Watering>>>

Score 8. The brisket looks dry and has been coated with a glaze sauce to cover. This may be different if I was actually able to see the meat.

9. Very nice box

Nice looking box, I'm giving it an 8. If it weren't for the staining (from the injection???) it would most likely score a 9.

Looks pretty good and appetizing, but the splotches detract a bit for me. I like the placement (on top of the garnish instead of nestled down into it) and the meat looks moist. I also like having both slices and burnt ends in together. Overall, a good looking box, but not quite excellent.

Laura - CBJ

Seven, possibly eight, beautiful smoke ring and a lovely shine on the slices and chunks; knocking down for staining on the box and the top of the slices, and a thinning of the garnish near the front of the box - doesn't look quite balanced.

BBQ Critic

Laura - it is not allowed to judge the SMOKE RING or GARNISH in a BBQ competition box.

Stephan Franklin

8 the color of the meat takes away from the overall appeal for me. Artificial comes to mind. Perhaps it is the injection.

Robert - KCBS CBJ\Comp Cook

9 - Looks very appetizing. Couldn't tell whether the dark spots were sauce or injection marks, so gave the cook the benefit of the doubt.

    Purpose

The purpose of BBQ Critic's JudgeMyBox section is to provide feedback to competition cooks. Certified BBQ Judges who visit this site will score the photo of a contest box (using KCBS judging rules) and may optionally leave a comment explaining their score.

The idea is to allow the cook to get inside the mind of a judge (judges do have varying opinions) so they can use this information to help improve scores on APPEARANCE.

In turn, the BBQ Critic editorial team will provide feedback on some judge scores and commentary  that stray from the KCBS rules. This will help our judges become better judges and keeps everyone on the same page. Judges may also encounter some fun challenges at times (click for example).

Comments about boxes or judges scores may be discussed in our online FORUM in a respectful manner.

Please be mindful that scoring photo boxes may not be as accurate as scoring the box in person. Lighting, glare, angles, etc may affect the overall score. Judges also have more time to stare at your box, so that means we may get very detailed about the good and the bad.

Have fun, judges! Oh, and cooks? Please send us your boxes. We love to judge Q here at BBQ Critic. ;-)
