7 - my immediate impression was "Wow" and then I saw the staining that appears to be the result of injecton. The discoloration was unappetizing. Absent that factor I would have scored this a 9

This just does not looked very appetizing. I do like the bark all around and that the ends are not trimmed off. It looks very dry.
The blotchy sauce looks bad.
It looks like they were unlucky and got a stringy brisket too.

Looks like nice, even slices. Meat itself looks very good. BUT, very sloppy job on saucing (if you can it that). Appears the cook "dripped" juice mainly on the front slice, then dripped some on the other pieces. Really took away from the appearance of the meat. If it was an even job of saucing, or non at all, easily would have scored an 8 or 9.

I would give this box of brisket a 6. The pieces are varying sizes, it looks like it lacks moisture, there are spoltches of something on or in some slices and the front slice looks mutilated.
It sounds like I have a beef with your beef but I feel that the dry look could have been masked with a light saucing and the other issues may be worked out by some careful carving and planning.

SCORE/REASONS= 6...presented nice, but injection marks make me want to pass on getting a piece

SUGGESTIONS...practice,practice,practice...maybe build a little bark.

Sauce is very uneven, the top most portion is going to taste very different than the rest.

Suggestion: Don't add that sauce/rub at the end on the top piece. Without that this might have scored perfect.

5 - Those splotches look strange and unappetizing.

Maybe the meat was dumped on the ground in transit to turn in.

5. The meat looks dry, and the brown spots from the injection are really unappealing. Nothing about this box of brisket makes me want to eat it.

Suggestion - Might have thought about coating this in sauce to hide the discoloration.

7--meat needs to be 'detailed'--clean up that front slice for sure!

personally think the product presents better square in the box vs diagonal

7,i think this meat looks very dry,
suggestions; change the placement of the meat in the box and first piece should be replaced,it just not appealling.

Score: 6

First of all this pic was taken with the box turned sideways. Not sure if you want the judges to look at like you have it turned in this pic or not. It looks better turned this way instead of the way it should be turned.

The meat is stained. Not sure if its from when the meat was cut or from injection sites. The meat looks very dry, tough, and pale.

Comments/Suggestions: I think the reason the meat looks pale is because it was wrapped up to long and not exposed to enough smoke. Also little worried you did not let the meat rest and cut into right after you took it off the smoke and therefore its looking dry. Also the front piece that looks really stained, if you would have switched it out with another piece that was not stained I would have most likely gave you a 7.

On a good note, the size of the slices are nice and right cut.

I was 6, then barely 7... I dont know, I could go either way. The presentation of the meat is nice and clean. However, the meat itself appears VERY dry (notice whiteish areas on right). Generally a decent color of/to the meat. The brown & blotchy "sauce" put on at the end actually takes away from the appeal.

I would score this a 6 (average). The splotches are awful looking and the meat is clearly very dry.

(it really should be a 5)

Meet looks dry and slices are crowded at the front

I would like to give it an 8 but the injection marks are just too bad.
Injection was too thick. Meat is unevenly spaced , if 3 and 4 were moved a little closer together meat would not be touching the front of box..

I don't understand. Brisket with chickenpox? Dry looking, unappetizing. Perhaps the cook tried to grill it after it was sliced; trying to get grill marks on it. The meat got marks all right.
A 4 from me.
For all the effort and what this might have been, if they'd've just left it alone. Or added some juice or drippings to show that some moisture was present. 1st piece has a big gauge in it. Sliced thickness is good however, as well as the shape of most of the slices. Placement in the box is well done, and shows some care was excercised.

Probably a 7. Lead piece has stray cuts / tears and a very mottled coloring. Just no wow factor here.

5 - Below Average

Meat looks grey and dry. What the heck are the splotches?

Garnish/presentation notes: Very well presented.

Dry is the theme here. Not sure if the dark marks in the meat is tracking from injecting or if the slices were put back on the heat...either way it's not appetizing. As a positive, slices are fairly uniform.

Dick - CBJ

Score 8. Clean up the slices, especially the first one, and this box would get a 9.

    Purpose

The purpose of BBQ Critic's JudgeMyBox section is to provide feedback to competition cooks. Certified BBQ Judges who visit this site will score the photo of a contest box (using KCBS judging rules) and may optionally leave a comment explaining their score.

The idea is to allow the cook to get inside the mind of a judge (judges do have varying opinions) so they can use this information to help improve scores on APPEARANCE.

In turn, the BBQ Critic editorial team will provide feedback on some judge scores and commentary  that stray from the KCBS rules. This will help our judges become better judges and keeps everyone on the same page. Judges may also encounter some fun challenges at times (click for example).

Comments about boxes or judges scores may be discussed in our online FORUM in a respectful manner.

Please be mindful that scoring photo boxes may not be as accurate as scoring the box in person. Lighting, glare, angles, etc may affect the overall score. Judges also have more time to stare at your box, so that means we may get very detailed about the good and the bad.

Have fun, judges! Oh, and cooks? Please send us your boxes. We love to judge Q here at BBQ Critic. ;-)
