7. Poor picture, hard to get a good clear look at this meat. Right side tapers and looks crumbly. No real "wow" factor to this box.

Good solid 8.

The first slice is falling apart on the right side. Would be a 9 if not for that.

7=above average Meat looks dark and not in the good way...that right hand small end of the slices look like they disintegrated

Looks like it may be overcooked due to the ragged edges in the front few pieces

8--good looking box of beef--

Score 7. Not a good picture to judge from. Brisket looks dry and box is crowded.

The flaky lower corner screams DRY to me. I understand it could have happened via table captain handling - but if the meat was perfect it wouldn't flake like that.

cbj/comp cook, 8 it looks just a little bit dry to me.

7 - Strange shape, sliced too thick(overcooked?), and what happened to the meat in the lower right corner???

Kendall - CBJ
3/20/2012 01:55:51 am

I'd give it an 8.

Score: 8
While the meat looks very nice overall, the lower right corner appears to that it may be falling apart and overcooked, but as the picture is rather fuzzy, I'm giving the cook the benefit of the doubt. I certainly wouldn't be opposed to taking a bite of this.
I have to say that I don't think the aluminum pan reflection did the cook any favors in this photo. Too much glare.

Slices look too thick, I know that we aren't judging the smoke-ring, but this one is through half of the slice! Looks pretty appetizing, but I'm definitely concerned about the tenderness; HOWEVER, since I am just judging appearance right now - 8.

7 - Above average

Can burnt ends be too burnt? Unevenly sized pieces. Ragged looking on the right hand side of front pieces.

Looks like some effort was put into this box, and it is very nicely arranged. There are just some problems with the meat that couldn't be overcome.

Beautiful box. 9!

Choice of which slices to put in the box may make a big difference. Your leading slices, at least the 1st one may have been left out and the presentation would have improved. That being said, nice box!

6, perhaps 7 if in person

I usually like where you fill the box with meat, but in this case the pieces are almost straight up/down and take away from the viewing of the meat. The garnish is actually crowding the meat. I think a few less pieces in here display the meat a little better brings this score up.

6/7, Meat looks overdone on the left side and shredded on the right, subtracts from overall appearance.

Hard to tell from the picture but what I can see just looks OK. Appears to have good back but cannot tell if it's dry or moist. Burnt ends placement looks a little random. In person this might get a higher score.

Note...might want to clean up the garnish framing the meat...too many dead zones.

8,pieces are cut little to trick.

Josh KCBS CBJ

7 It is hard to tell from this angle, but the right side of the slices make it look overcooked

Randy Stewart KCBS CBJ
3/20/2012 11:46:18 am

Score: 8 - Nice looking box in spite of the camera angle. Good bark and nice color on both the slices and burnt ends. The arrangement was just a little crowded and the burnt ends aren't quite evenly placed or I'd have given a 9.

Jean K KCBS CBJ

8 - brisket slices look a little dry, but are large; color looks good, would like to test for texture and flavor! Burnt ends look good too, just not quite a 9 from me...

Steve K. CBJ/KCBS

Man, this was a case of putting too much meat in there and ruining a great score because of it. The back six slices are uniform in size and, if the sides of the slices looked like the front ones, you would have gotten a nine from me. The front four slices, other than being completely unnecessary in this box, are of a different size than the back four and the ragged right ends just ruin what could have been a perfect box. Sorry, but you worked it down to an eight.

Might be a 6 or a 9 in person.
I really wish this picture would enlarge. I even tried using a magnifying class to get a better look. The question is whether this is overcooked and dried out. Can't tell. The front slices are falling apart on the right side so that might be a sign. The slices do have some nice bark on them. If there was a layer of fat, it would aid the misture factor even if it is overcooked.

Sure would have liked to have seen and tasted this one in person

7 - I have yet to encounter tastewise in a contest something that had too much smoke. At least for my taste. I have heard of this though, and this might just be the one. The slices are of different thickness, the burnt ends could be more uniform and placed better, the shredded ends of some of the slices could be a sign of overdoneness, or bad knife work, hard to tell. I will be interested to hear your impressions on this one guys and girls.

    Purpose

The purpose of BBQ Critic's JudgeMyBox section is to provide feedback to competition cooks. Certified BBQ Judges who visit this site will score the photo of a contest box (using KCBS judging rules) and may optionally leave a comment explaining their score.

The idea is to allow the cook to get inside the mind of a judge (judges do have varying opinions) so they can use this information to help improve scores on APPEARANCE.

In turn, the BBQ Critic editorial team will provide feedback on some judge scores and commentary  that stray from the KCBS rules. This will help our judges become better judges and keeps everyone on the same page. Judges may also encounter some fun challenges at times (click for example).

Comments about boxes or judges scores may be discussed in our online FORUM in a respectful manner.

Please be mindful that scoring photo boxes may not be as accurate as scoring the box in person. Lighting, glare, angles, etc may affect the overall score. Judges also have more time to stare at your box, so that means we may get very detailed about the good and the bad.

Have fun, judges! Oh, and cooks? Please send us your boxes. We love to judge Q here at BBQ Critic. ;-)
