Very pretty. Good slices, nice color.

Just looks a tad dry or would be a 9.

8 - Nicely cut, great looking bark, and it is presented so that plenty of the meat is showing; though it is cut a little too thick

Solid 8. Box is attractive, garnish is good, meat is centered and equal in size. Meat looks appetizing, only thing keeping it from getting a 9 from me is that the meat looks a little dry. If I were seeing it in person, that might change.

7 Spend a little more time placing the slices evenly in the box and trim to fit the box before smoking the brisket.

eight---looks pretty good

look like a couple slices need another brush of the 'sauce' but really would like a taste of these samples

7, meat looks dry,

7 - Too thick, look dry, and what is the stuff all over the garnish?

mkevenson CBJ

7
dry and slices are a bit thick. Improvements suggested, a lite glaze or sauce on the slices to add glisten. Slices thinner, no thicker than a pencil. When stacking slices feep all the slices symetricle in spacing one to the other.

Nice clean cuts, great proportion to the box.

I give the box an 8.

Score: 7
While the presentation and box layout is pretty nicely done, the brisket itself appears over-cooked & dry in this photo. (Better lighting might have made a difference, but we have to go with what we're given.)

Presentation is nice, meat looks very dry and the smoke ring doesnt appear to be from wood smoke.

Score 8. Nice box of brisket. The meat appears dry and therefore I did not give it a nine.

Brian CBJ/KCBS

Looks like it may be overcooked by the thick slices also looks a little dry. Nice bark and presentation.

8 maybe 9 in person if moist.
Good looking bark on this. Wish there was a nice layer of perfectly rendered melt-in your mouth fat.
Why is there almost never any fat on KCBS comp brisket?

Score 9 Pieces appear to be a little thick, but cut straight across. Could be burned and overcooked a little, but overall good looking meat that is trimmed and presented with care. Seven pieces considers the Table captain. I would always like to see burned ends.

Score: 9 - Excellent uniform slices and placement in the box. Color is consistent and delicious looking.

Nice color and bark. Meat looks moist. Even though the smoke ring isn't taken into consideration it add to the overall appearance of the box.

    NAME FIELD ON FORM:
     State name/CBJ Organization (i.e, Tom - CBJ/KCBS). CBJ=Certified BBQ Judge

    EMAIL FIELD ON FORM:
You must be a "registered" BBQ Critic Online Judge in order to judge boxes on this site. Proof of registration is your email. All registered judges are required add their email to the email form field. Emails are kept private and not published. If you do not list your email, your score/post will not appear on the site.

SCORE/REASONS FOR SCORE: Score this entry and give reasons for your score. DO NOT mention garnish or smoke rings in your reasons for scoring. We judge meat only.

    Purpose

The purpose of BBQ Critic's JudgeMyBox section is to provide feedback to competition cooks. Certified BBQ Judges who visit this site will score the photo of a contest box (using KCBS judging rules) and may optionally leave a comment explaining their score.

The idea is to allow the cook to get inside the mind of a judge (judges do have varying opinions) so they can use this information to help improve scores on APPEARANCE.

In turn, the BBQ Critic editorial team will provide feedback on some judge scores and commentary  that stray from the KCBS rules. This will help our judges become better judges and keeps everyone on the same page. Judges may also encounter some fun challenges at times (click for example).

Comments about boxes or judges scores may be discussed in our online FORUM in a respectful manner.

Please be mindful that scoring photo boxes may not be as accurate as scoring the box in person. Lighting, glare, angles, etc may affect the overall score. Judges also have more time to stare at your box, so that means we may get very detailed about the good and the bad.

Have fun, judges! Oh, and cooks? Please send us your boxes. We love to judge Q here at BBQ Critic. ;-)
