8. This pork looks great but if you're going to use sauce make sure it gets on all of the pork. Would have been a 9 otherwise.

7 sauce is heavily applied and makes it difficult to judge the appearance of the meat.

the chunks are covering the pulled section and i would have liked to have seen what the pulled meat looked like since a small portion is peaking through!.

6 - unappetizing. meat looks grey. sauce does not seem to carefully applied and looks like a last minute add-on.

john kcbs

Score: 7 - Uneven sized chunks of meat; overly sauced

Deb KCBS MCBJ/CTC
2/1/2013 12:41:58 am

Score: 8 (Very Good) Pay attention to placement and lighten up on the sauce and this might have been a 9.

Suggestion: This box might be a bit overfull, or just not as well organized as it could be- not sure which. The chunks on top of the pulled pork aren't really necessary and are effectively hiding it. If the cook had placed those pieces around the outside instead, they might have enhanced rather than detracted from the pulled pork. Also, the sauce was applied a little too heavily and without caution (there are places where it just looks gloppy).

Nowthis is a nice box I'm licking my computer screen 9

7 - Hard to see the meat with all that sauce. Nice looking bark. Suggestion: be careful that your cuts are all equal in quality if you present sliced, chunks and pulled. The lower quality on one cut can bring down the scores on the others.

Score = 8. Very good box. Moist, plenty of meat. Would love to pop one of those burnt ends in my mouth!

Suggestion: would be nice to get a better view of the pulled pork that's peeking out from under the burnt ends. Careful on the sauce :)

score=9 looks tasty, nice symetry in the display

8....The sauce is covering up some good looking meat. Nice bark and the pulled appears to be moist.

Use less sauce. The sauce on the Money Muscle slices is unappealing. Sauce before you slice and that should make for a better appearance.

Pretty hard to work with that picture, but ti looks like your saucing job looks a little heavy and incomplete. Hope it doesn't interfere with the taste of the pork. The pulled in the middle is pretty ineffective as you can barley see it. If it's just there for filler to lift the meat up, realize it's going to be tasted and scored as well so it should be just as good as the chunks.
Above average 7

6 Sauce heavy, color off, not appealing at all.

Suggestion: Arrange the cut pieces so that pulled meat also appears and is not covered up.

7 - Too much thick gloppy sauce, plus it hides the meat (intentional?). Can't see the pulled meat because its covered up.

Suggestions/Comments: A box arranged this way FORCES the judges to take the meat chunks covering the pulled meat, otherwise the pulled meat will never be accessible for judging. Suggest you leave the pulled meat uncovered and not buried beneath MM or other chunks of meat.

Gregory Blume

7 The color is not appealing but that may be viewing on a computer. The M/M slices looks like sauce is uneven, you can see bare meat on some pieces. Where is the nice looking pulled pork? it is buried underneath those chunks. Need better arrangment, and attention closer to detai.l

9. Beautiful box of pork. Very nice bark on all chunks with pulled beneath. I would however go a little easier on the amount of sauce.

Paul KCBS/CBJ

8 - Very nice looking box arrangement, sauce may be too heavy.

Chaz D kcbs cbj

Score: 7
The sauce is uneven and overdone and the pieces are hiding the pulled underneath.
Suggestions: I appreciate folks that put in more than 6 pieces but dont make your box suffer for it. If you know your pieces are not connected I wouldn't worry too much about hangers and more about presenting the meat in a fashion that appeals to the judges.

Score = 8 I know there's pulled meat in there but I can't see enough
of it. Other than that it looks great.

Suggestion: Remove pieces covering the pulled meat.

Doug KCBS MCBJ & CTC

Score = 8. I can see some bare spots on the meat where the sauce isn't covering. Fix that and the box will be a 9

Suggestions: I don't know if you want to cover the pulled pork up with chunks. Might be nice to see both.

I would give this box an 8. Pork looks very appealing. May have a little to much sauce and chunks are not cut into uniform pieces. I would like to try this pork! Presentation may have looked better if the chunks were placed around the outside of the box with the pulled showing in the middle of the box.

Larry MCBJ

Uneven, gloppy sauce gets an 8. I won't deduct for the fuzzy picture.

7.

Maybe just have the the chunks of pork around the edges of the pulled pork in the center and not on top

Jim H - CBJ SBN/KCBS

Score: 7 - This pork is unappealing, mostly because of the amount of sauce on it. The picture quality doesn't help.

Suggestion: Don't put so much sauce on the meat.

SCORE: 7. Too much sauce and can't see the shredded/pulled meat on the bottom. Nice bark.

Kev B
2/2/2013 09:50:52 am

SCORE: 6. Looks like they threw it in box.

SUGGESTIONS/COMMENTS: Take some time to place your meat in the box. The heavily sauced pieces is what shows the cook did not take time to carefully place it in box. They very heavy sauced, half sauced pieces on the left could be brushed out more on the meat like the ones on the right side. Maybe little more garnish on the sides of the box would have covered this up.

8 - Very good! Good variety of pork in the box. Everything looks great. My only complaint is that the pulled is covered up.

8 - the slices and chunks look great. Not sure if the chef was trying to hide the pulled pieces under the chunks, but if you are going to submit all three then please show all three. The sauce glistens and looks very appealing.

I don't think that the picture does the box justice, so I'm going with the Pitmaster. It's a nice full box of pork with three (3) offerings of shoulder meat: slices, pulled, and chopped / shredded.

Looks fairly appetizing, but definitely too much sauce - not evenly applied and too thick.

    Purpose

The purpose of BBQ Critic's JudgeMyBox section is to provide feedback to competition cooks. Certified BBQ Judges who visit this site will score the photo of a contest box (using KCBS judging rules) and may optionally leave a comment explaining their score.

The idea is to allow the cook to get inside the mind of a judge (judges do have varying opinions) so they can use this information to help improve scores on APPEARANCE.

In turn, the BBQ Critic editorial team will provide feedback on some judge scores and commentary  that stray from the KCBS rules. This will help our judges become better judges and keeps everyone on the same page. Judges may also encounter some fun challenges at times (click for example).

Comments about boxes or judges scores may be discussed in our online FORUM in a respectful manner.

Please be mindful that scoring photo boxes may not be as accurate as scoring the box in person. Lighting, glare, angles, etc may affect the overall score. Judges also have more time to stare at your box, so that means we may get very detailed about the good and the bad.

Have fun, judges! Oh, and cooks? Please send us your boxes. We love to judge Q here at BBQ Critic. ;-)
