9 nice box

Bill F

7 Nice arrangement but way too much sauce painted on. I wonder if you can even taste any meat flavor?

Jim H - CBJ SBN/KCBS
6/10/2013 03:10:01 pm

Score = 7; the medallion in the right front is out of line with the others; plus the color is off (possibly the photo); the sauce is too prominent, making the meat look "shiny," and making it difficult to see the true color of the meat.

John - KCBS / MCBJ, CTC, Rep; MBN & MIM Judge

Score/Reasons: 9 - Nice looking box of pork. Appearance says "dive in."

Suggestions/Comments: I scored what was in the box. I did not second guess the cook's reasons for not placing pulled or chopped meat into the box.

Pete - KCBS
6/10/2013 03:35:34 pm

SCORE - 8. Awesome bark, nice arrangement, sauce looks more like a glaze than a competition meat but still very appetizing.

COMMENT - Personal preference is not the basis for my score but I will be curious to see if judges say this is too yellow. To me yellow=delicious. I am from South Carolina, long live mustard-based. ;-}

David / CBJ -KCBS link

Score - 8

Comments - very pretty box. However the glaze is excessive and hides the appearance of the pork.

Don

8 - good color, looks juicy, nice uniform rows with 2 MM included, shows that cook knows how to work with a pork shoulder

Jeff CBJ
6/10/2013 04:48:12 pm

8 here. What's keeping it a 9 for me is no separation in the arrangement.

dave h

8, very nice, just a touch too much sauce though

Ike, CBJ/KCBS
6/10/2013 11:38:08 pm

9. Nice arrangement and meat has good bark and looks tender.

Comment: getting close to having too much sauce.

Chaz D KCBS CBJ
6/11/2013 01:06:30 am

Score/Reasons: 8 The slices look pretty uneven in thickness and the meat is sauced too heavily.

Suggestions/Comments: If you really want to sauce your meat I would suggest doing it a bit more sparingly. And while I appreciate people adding meat to the box I would re-consider some of the pieces you included. Try to remember that judges appreciate uniformity.

Score/Reasons = 8, great looking box except that the sauce is way too heavy.

Suggestions/Comments = None.

score=9
well done box. A little less glaze would be ok next time.

Lorne Rae
6/11/2013 01:35:55 am

an 8. Good layout, well arranged, look moist but but right slice row bends inward at front. Fewer slices might make the box look less busy and allow them to be viewed more fully - also the fewer the pieces the less risky the box becomes to poor knife skills or even sizing.

Deb KCBS MCBJ/CTC
6/11/2013 02:19:17 am

Score/Reasons: 8; The thick, gloppy glaze on the meat makes it look almost artificial. Having said that, the construction of the box is very nicely done.
Suggestions/Comments: Lighten up on the glaze- let the meat speak for itself.

jaja01 KCBS MCBJ CTC

Score/Reasons = 8, the box looks good but the meat is a bit over sauced. This makes the meat look slimy.

Suggestions/Comments = a little sauce can go along way in making the meat look good. Less is more in this case.

Tom, CBJ PNWBA

8, Nice box, but looks coated with sauce.

Doug KCBS MCBJ & CTC
6/11/2013 03:00:12 am

Score = 9

Comments: Almost too much sauce on this one, but not enough to bring the score down.

Dan CBJ/KCBS
6/11/2013 03:51:00 am

Score=8.

The meat itself looks excellent however there appears to be an excessive amount of glaze on the meat. A bit of a shine certainly implies that the meat will be moist but my first impression was of a "gloppy" coating. I have a strong suspicion that this would be a strong 9 for taste.

George

8 - Looks oversauced.

Dick-MCBJ/CTC
6/11/2013 06:33:50 am

Score 8. Reason: This entry would be an easy nine except for the goopy gravy that the meat was coated with. I like the box balance and the two meat placement. Suggestion: either reduce or leave the sauce off, I hope the cook did not coat the pork to add taste.

Bruce Heckart

9.....Meat looks very appetizing. I like the color and the layout of the meat looks great.

Nanette Heckart

9, I like the shine of the glaze and I like the way the meat is arranged.

Tom
6/11/2013 10:27:49 am

That is a very nice looking box, might be a little too much sauce on, hard to tell from the pic but it does look real good. Definitely an 8 minimum, possibly a 9 in person. I would also tighten up the parsley around the outside, but great box!

9- Great color on slices and chunks. Excellent arrangement : is orderly and uniform, Excellent looking box!

8 Too heavily sauced for my taste.

The money muscle looks great as does the bark pieces, but no pulled pork.

Matt KCBS CBJ
6/12/2013 01:11:51 am

8 - Very good. Money muscle looks good, and the chunks look tasty.

Suggestion: Maybe a little heavy on the sauce. Also, the pork looks like it may have greyed a little in the box... but didn't affect my scoring.

8...Nice bark and color. Way over sauced. Sauce may be covering up dry meat.

Take a little more time to space the M/M. A chuck is covering up the front of the slice on the right. Make both sides the same.

Nice arrangement, looks a little over sauced.

Suggestions, if using garnish a little more balance.

Score/Reasons = 7, too much sauce and the color of the sauce is a bit dark. Not an appetizing color to me. Slices in the front are thick and look like the chunks.

Suggestions/Comments = nice looking chunks, nice bark on all of it.

Ed KCBS MCBJ
6/13/2013 02:19:17 am

Nice full pork box. Well glazed but I'm afraid it will interfear with my tasting the pork. Slices could be arranged better.
I see a very good 8.

Score/Reason: I would score the box a 9. This looks great!
Suggestion: You may want to hold back on a little on the sauce the next time.

    Purpose

The purpose of BBQ Critic's JudgeMyBox section is to provide feedback to competition cooks. Certified BBQ Judges who visit this site will score the photo of a contest box (using KCBS judging rules) and may optionally leave a comment explaining their score.

The idea is to allow the cook to get inside the mind of a judge (judges do have varying opinions) so they can use this information to help improve scores on APPEARANCE.

In turn, the BBQ Critic editorial team will provide feedback on some judge scores and commentary  that stray from the KCBS rules. This will help our judges become better judges and keeps everyone on the same page. Judges may also encounter some fun challenges at times (click for example).

Comments about boxes or judges scores may be discussed in our online FORUM in a respectful manner.

Please be mindful that scoring photo boxes may not be as accurate as scoring the box in person. Lighting, glare, angles, etc may affect the overall score. Judges also have more time to stare at your box, so that means we may get very detailed about the good and the bad.

Have fun, judges! Oh, and cooks? Please send us your boxes. We love to judge Q here at BBQ Critic. ;-)
