Score/Reasons = 9, A bit jumbled but a great looking entry.

Suggestions/Comments = Nice to see pork that isn't over-sauced and/or shredded. Chunks & Slices. Shredding, to me, screams "i overcooked this thing" Great Entry!

7 - looks dry and pieces are not uniform in how its laid out in the box

7, looks a little sloppy and potentially dry

7 meat looks dry and presentation seems random/scattered.

7. Sample look haphazardly placed and unevenly cut also looks dry.
Take some time cutting samples evenly and a eye appealing placement should help your presentation score

score=7
pretty good looking meat but you need a lot more practice at making presentation boxes

David - CBJ/KCBS
7/28/2013 08:49:34 am

Score -7 - overall presentation is not very ordered. The 6 center pieces are a bit different in size and the outer pieces appear almost random in sorting. Also looks very dry. No shine or appearance of being moist at all.

Lorne Rae
7/28/2013 09:09:16 am

a 7. Nice even color and a very good and original layout. However, the placement is not uniformly even (6 on right and 4 on left) and they also look dry.

Bruce N

An appearance score of 7, The meat looks thrown in the box without care. More care should be given when arranging the meat.

John - KCBS / MCBJ, CTC, Rep; MBN & MIM Judge
7/28/2013 09:14:57 am

Score/Reasons: 7 - it may be the photo, but this meat looks dry and quite ordinary. The layout is sparse & in a bit of dissarray. My 7 may be being generous.

Suggestions/Comments: Spritz the meat after it's in the box. Put more meat into the box...or arrange it closer together so that it doesn't look so sparse. A full (appearing) box looks better.

George

7 - Haphazard arrangement. Looks dry.

Dick-MCBJ/CTC
7/28/2013 09:53:01 am

Score 7. Reason: I believe that the cook placed the meat into the box to show all of the sides, but judges may just look at the box as being "tossed together" or disorganized. Also I would like to see more color on the bark side of the meat. Suggestion: The cook could have eliminated both of these problems by just placing chunks, with some of the bark color mixed in, and I believe the entry would score higher.

Mike S.; KCBS MCBJ
7/28/2013 10:42:13 am

Score/Reasons = 6; Does not look appetizing. Lack of bark, and what bark there is; is not evenly covering the areas that were exposed to the heat. From what pieces I can see, the pork looks dry.

Suggestions/Comments = More bark that is evenly distributed, would greatly improve the appearance. The bottom row of pieces of meat look like they were haphazardly place in the box. Maybe center the two rows of sliced pork, eliminate the bottom row of pieces, leave the pieces you have on each side, but line both sided like the side on the right.

7...Decent bark and color. Meat looks dry. Disorganized box.

Needs some shine. Make a neater presentation. Peoples eyes followers lines this has none.

9. Nice bark showing. Can't see the sides to look for moistness...being optimistic.

Matt KCBS CBJ
7/28/2013 02:12:03 pm

Score/Reasons = 7, meat looks above average, but not excellent. Looks like the sugar in your rub may have over-caramelized.

Suggestions/Comments = I have to be honest, I do not understand this method of presentation. The box looks disorganized, hurried and a bit sloppy. The devil is in the details!

Don
7/28/2013 02:51:29 pm

9 - I struggled with this one but since I see what I think is a sheen, I will make the determination that the meat is juicy. Cuts on the MM look good and I love that chunks with bark have been included. I have no problem with the way the meat is placed in the box. I find the box appealing and I want to taste one of the chunks to experience the cooks flavor profile and balance.

Doug KCBS MCBJ &CTC

Score = 7 Placement looks haphazard. Color is uneven. Pork looks dry.

GeorgeB
7/28/2013 09:41:30 pm

Score/Reasons = 7, haphazard arrangement. No uniformity amongst the slices, assuming they where meant to be slices and not chunks. The meat itself looks pretty good.

Suggestions/Comments = cut slices thinner and more uniform in thickness. Perhaps adding more chunks and grouping them together in random order so they don't appear as a sparse offering. Would be nice to see some of the white (interior) meat rather than all bark up.

Frank KCBS MCBJ CTC
7/29/2013 01:08:56 am

Score/Reasons = 7, picture is a little overexposed so score may be different in person. Bark is very uneven.

Suggestions/Comments = Arrangement looks a little sloppy.

Tom - CMJ-KCBS; CBJ-MBN/NCBS/NCPC & comp cook
7/29/2013 01:21:00 am

Score/Reasons = 6, looks very dry and everything looks the same (I can identify the MM, but the chunks have the same bark look).

Suggestions/Comments = definitely spritz or sauce or moisten with something! Better arrangement will score better, and sizes/shapes of chunks would be better if more similar.

Shawn-KCBS CBJ and Comp Cook
7/29/2013 02:12:08 am

Score/Reason: I would score this box a 6. Meat looks a little dry and is very dark in color.
Suggestions: Try to cut the pieces a little more uniform and put in the box in a uniform fashion.

Deb KCBS MCBJ/CTC
7/29/2013 02:43:34 am

Score/Reasons: 8, This box looks a bit haphazard, as if the chunks may have been tossed in. A little more precision in the box layout and it could be a 9.
Suggestions/Comments: Photo is not great, doesn't do justice to the meat.

Pauline Corbett
7/29/2013 02:51:45 am

The box looks nice but sloppy. The smaller pieces are not cut very even, and there are no pulled peices. I would give this box a 7.

Shawn Higgins
7/29/2013 04:42:45 am

Score = 7. The meat looks tender and the bark is little inconsistent when looking at the larger pieces. To me, the box looks like the big pieces were placed in the garnish and the rest was just scattered. Not very uniform and doesn't look great. I would have liked to see some pulled as well.

Ike, CBJ/KCBS
7/29/2013 04:45:32 am

Score/reasons: 7. Meat looks dry, poor color and uneven sizes of slices and chunks. Not very well presented.

Karen link
7/29/2013 05:01:39 am

SCORE/REASONS: 6 - The pieces look dry and their placement is a bit messy.
SUGGESTIONS/COMMENTS: You might want to try to cut the meat more uniformly (I know it's tough!) and use a less "scattered" look when placing them in the box. Perhaps a little pulled pork (it's easier to make pulled look uniform)?

Pete KCBS
7/29/2013 05:40:25 am

Score 8 - This is kind of unique and I generally appreciate the effort when cooks try something different. I'd assume each judge would sample one of the thick slices in the middle and the smaller pieces along the edge. It all looks very appetizing to me, dry rubbed, not saucy with nice bark and (I think) fairly moist meat.

Steve R - KCBS-CBJ
7/29/2013 06:01:41 am

Scored a 6 - the meat looks like it might be moist and appetizing, but it was presented VERY hap-hazzardly, like the pieces were just thrown in the box. More effort needed by the competitor.

GregG KCBS/MCBJ
7/29/2013 06:02:53 am

7 - Samples appear to be dry and "tossed" in the box.

Bill KCBS MCBJ/CTC
7/29/2013 06:56:14 am

Score/Reasons = 8. Needs to have a better arrangement. Nice bark.

jaja01 KCBS MCBJ CTC
7/29/2013 08:08:05 am

Score/Reasons = 6, The meat was put in the box in a disorderly manner. The meat appears to be dry, the rub is not even and appears to be falling off the meat and the red color is a big turn off. This box is not appetizing.

Suggestions/Comments = Take care in placing the meat in the box. Change the way the rub is placed on the meat and change the glaze to something that is less red.

7...ABOVE AVERAGE.. The color is very good. But it looks dry and a bit haphazard.

Suggest: Although garnish is not suppose to be considered, I have sat with other judges who would have scored this lower due to the garnish being skimpy. Therefore, I'd make a box that conforms to the more usual parsley arrangement. It shouldn't make a difference but it unfortunately does.

Dan KCBS CTC,MCBJ

8 more meat would get 9
maybe a bit of glaze for some shine

8 - The items are loosely positioned in the box and lacked symmetry.

7 Too dry, needs pulled pork also.

ED KCBS MCBJ
7/31/2013 04:16:39 am

Y'all know by now I always find something nice to say about a box...
That's some nice bark on your random sized random plopped pieces of dry looking pork! There is no symetry in your sauce glopped box interior. At least cut your slices the same width so they take up the same space in the box.
Keep at it, your next box can only be better.
I'll have to score it a below average 5.

Bobby Whitefield
7/31/2013 07:38:47 am

Meat appears extremely dry. Slices need to be thinner. More pieces need to be added to the box. Presentation not the best. A 5 at best

Lorrie KCBS CBJ link

7 - meat does not look uniformly cut and appears to be haphazardly placed in the box - and appears somewhat dry - nothing makes me want to jump right in and taste this.

Jeff KCBS CBJ

score/reason 6 looks very dry, brunt in spots, just thrown into the box not even at all.Very unappealing.

Chaz D KCBS CBJ
8/3/2013 06:24:41 am

Score/Reasons: 7 The meat looks dry and the bark is very light, the box looks thrown together.

Comments: Pay attention to the size/shape/orientation of your pieces. Judges will always reward a box that looks well thought out and carefully prepared.

Jim S. KCBS CBJ NEBS
8/5/2013 01:54:48 am

Score/Reasons = 6, Pieces look very mismatched and unorganized in the box. Meat looks on the dry side.

Suggestions/Comments = Watch your presentation. A good presentation shows you are proud of your turn-in, And your appearance score will reflect it.

    Purpose

The purpose of BBQ Critic's JudgeMyBox section is to provide feedback to competition cooks. Certified BBQ Judges who visit this site will score the photo of a contest box (using KCBS judging rules) and may optionally leave a comment explaining their score.

The idea is to allow the cook to get inside the mind of a judge (judges do have varying opinions) so they can use this information to help improve scores on APPEARANCE.

In turn, the BBQ Critic editorial team will provide feedback on some judge scores and commentary  that stray from the KCBS rules. This will help our judges become better judges and keeps everyone on the same page. Judges may also encounter some fun challenges at times (click for example).

Comments about boxes or judges scores may be discussed in our online FORUM in a respectful manner.

Please be mindful that scoring photo boxes may not be as accurate as scoring the box in person. Lighting, glare, angles, etc may affect the overall score. Judges also have more time to stare at your box, so that means we may get very detailed about the good and the bad.

Have fun, judges! Oh, and cooks? Please send us your boxes. We love to judge Q here at BBQ Critic. ;-)
