7-- looks dry

PS CBJ

Score 7
the pieces look eneavnly cut. The smoke ring is there. I guess the cook wants his meat to stand alone with no sauce. It may have been better to pull or chop the pieces.

I would score this box a 6.
Suggestion: before you close the box put a little sauce or broth on the meat to moisten the meat.

Steve Amos

My score would be a 6 or 7...does not look moist, needs a lot of help with consistency

A few pointers, look at BBQCritic.com to see what a box should look like...parsley is very inconsistent, if you want to get decent scores, you probably want to turn in a variety of preparations, just turning in sliced makes it look like you couldn't pull any because it didnt hit the temp mark. I would also suggest using a small amount of sauce to add the appearance of moisture.

Score = 6, possibly 7 in person.

Poor arrangement, odd pieces and meat looks dry.

Lorne Rae

6. Look dry and no apparent layout pattern or sizing.

7 looks dry and unappealing. add a glaze to make it look better and probably taste better too. sizes of cuts differ. should be similar in size and shape.

5 - This is not a good offering and I question the skill level of the presenter

Judging by photo, meat looks somewhat dry and pieces are not uniform in size at all. Not even sure how many pieces are there. Scored a 6

Score/Reasons: 6 - To my eye, this is a box of jumbled, disorganized, dry, unappealing meat.

Comments/Suggestions: Moisten the meat to give its appearance as much pop as possible. Arrange it in an orderly manner for presentation.

Dick-MCBJ/CTC
1/14/2014 03:08:46 pm

Score 7. This entry needs to be more organized, better and more even slices and possibly a light sauce as the pork appears dry.

Tiffany - KCBS CBJ, CTC
1/14/2014 10:33:25 pm

7 - Looks awful dry and like it was just hacked at - yuck.

This one may have scored better if it would've been presented differently - again - garnish looks like crap - shouldn't count - but the whole box looks like someone didn't care.

DJ Martin

Score/Reasons = 6 Looks dried out. I'm not a stickler for perfect uniformity but a little more care could have been taken here.

GeorgeB - KCBS CBJ
1/14/2014 10:53:01 pm

Scrore/Reasons = 6, meat looks dry. Slices are uneven and cut in different directions across the grain. Not much bark at all. Arrangment sloppy.

Suggestions = Use more uniform slices and show more bark. Chunks or pulled in addition to slices would look much nicer. A spritz or light brushing of drippings may make the meat look moist. Make the garnish uniform in the box.

Score/Reasons = 7, looks EXTREMELY DRY!!! But still above average compared to ALL bbq in the world.

Suggestions/Comments = SPRITZ!!! or add a thin sauce! Frame the meat with the garnish (not a score factor)..

I give this box a 7. I don't feel that the meat is very appealing, and the garnish just kind of thrown in.

joe

8 - Nice looking presentation; however, the left center piece does not look appealing. I would recommend putting the right center pieces in the front as they look better.

jaja01 KCBS MCBJ CTC

Score/Reasons = 5, the slices are not evenly cut and are not placed in the box in a neat fashion. The larger concern to me is the color of the meat which is gray. This makes the meat appear unappetizing.

Suggestions/Comments = Assure the slices, which I do like, are cut evenly and place in the box neatly. Maybe, to prevent the gray color, add a little sauce to the meat to add a little color.

Frank KCBS MCBJ CTC
1/15/2014 01:41:25 am

Score/Reasons = 6. Meat appears a bit dry. You need a little glaze or light sauce to make this appeary juicy.

Suggestions/Comments = Neaten up that garnish. If you present slices try to include the tender, moist areas of the shoulder. It appears that a mixture of muscles are presented here.

Old Goat

6 Box is utterly bland.
Meat appears dry and over cooked. Needs something to give it a
little zing for eye or taste appeal.

GregG KCBS/MCBJ

7 - Samples appear to be dry and “tossed” in the box.

Larry MCBJ
1/15/2014 02:01:09 am

6 - Looks dry, irregular cuts, no symmetry, and no wow factor. Looks thrown together.

BlueSmoke KCBS CBJ/COMP COOK

6...Average box at best. Meat looks dry especially the slices on the right center. Sloppy presentation. Some slices cut with the grain and some against the grain.

Garnish out of balance. Not enough meat in the box. Line the meat slices up so there's a pattern.

Shawn Higgins

Score = 7

It's tough to score this entry. Unable to determine if the pieces are moist but they do look cooked. Plus the entry only contains slices. There are no pulled or chopped pieces. Smoke Ring is not apparent in all pieces.

5 looks very dry and unappealing.

The box just looks thrown together, garnish uneven. uneven meat placement.

1/21/2014 09:20:15 am

I would give this box a 7. The meat looks dry and it seems there wasn't any thought as how to display the pork. It looks like it was just placed in the box randomly.

7, Looks DRY and no uniformity to the slices

Matt KCBS CBJ
1/21/2014 12:29:20 pm

Score/Reasons = 4 - Poor - Disorganized box, meat looks super dry, tough and downright unappetizing. I was between a 3 and a 4. Sorry, just being honest.

Suggestions/Comments = I don't know what to suggest.

    Purpose

The purpose of BBQ Critic's JudgeMyBox section is to provide feedback to competition cooks. Certified BBQ Judges who visit this site will score the photo of a contest box (using KCBS judging rules) and may optionally leave a comment explaining their score.

The idea is to allow the cook to get inside the mind of a judge (judges do have varying opinions) so they can use this information to help improve scores on APPEARANCE.

In turn, the BBQ Critic editorial team will provide feedback on some judge scores and commentary  that stray from the KCBS rules. This will help our judges become better judges and keeps everyone on the same page. Judges may also encounter some fun challenges at times (click for example).

Comments about boxes or judges scores may be discussed in our online FORUM in a respectful manner.

Please be mindful that scoring photo boxes may not be as accurate as scoring the box in person. Lighting, glare, angles, etc may affect the overall score. Judges also have more time to stare at your box, so that means we may get very detailed about the good and the bad.

Have fun, judges! Oh, and cooks? Please send us your boxes. We love to judge Q here at BBQ Critic. ;-)
