8 appears dry, sauce drips in garnish and on box

8-- very nice

Steve Amos

FIrst, the box looks like it was shook up a little, so Im assuming that it was done post turn in.

My score would be a 7 or 8...the ribs look good, but could be cut better and more consistency in color. The tips at the bottom appear very dark.

The ribs also appear very sweet and shiny, probably more than I would prefer. They do appear done pretty well based on the bone thermometers.

I would score this box a 7.
Suggestion: take a good look at the box before you turn it in an do a touch up.

Score 8
The back right rib looks burnt. The Parsely could have been neater.Sauce is uneven

Score = 8.

Good looking box of ribs but possibly a little too much sauce.

7. Good color and nice placement but the ribs are of different size and some cuts are bowed not straight.

8 kind of picky but the ribs don't have consistent surface appearance. looks blotchy and it caught my eye so i couldn't call them perfect.

7 - Box lacks organization, ribs are not neatly arranged, box has sauce stains.

Steve R - KCBS and BBQ Brethren CBJ

Ribs look very good, above average and not too much sauce. Nice to see extra pieces. Score an 8.
Side note: Garnish distracts from the overall appearance of the box - I would definitely mark down for it if it was part of the score.

Score/Reasons: 7, maybe 8 in person. Ribs are nicely presented but just need that certain pop to make for a higher appearance score.

Suggestions/Comments: Spritz the ribs just before closing the box to provide that moist and juicy appearance. Clean up the sauce smeared on the hinge area of the box.

Dick-MCBJ/CTC

Score 8. The ribs look good. The cook just needed to take more care assembling the box and also elevate the meat out of the garnish.

Tiffany - KCBS CBJ-CTC
1/14/2014 10:28:17 pm

8 - something about the ribs looks a bit 'withered'.

We are trained not to take the garnish into consideration (unless it is illegal) - but I guarantee some judges do - and this garnish is sloppy - that'll cost ya points.

GeorgeB - KCBS CBJ

Score/Reasons = 7, box hit me as "sloppy". A few ribs almost have an overcooked/shriveled look to them with sauce on top to hide it.

Suggestions = Tidy up the garnish, maybe use lettuce instead of parsley with stems. Meat has a nice color.

DJ Martin

Score/Reasons 7 Way too much sauce dumped on after the cook. Sloppy box

Tom - CMJ/KCBS; CBJ/MBN,NCPC, NCBS & comp cook

Score/Reasons = 8, Looks VERY GOOD, but too many wee problems to be excellent: uneven cuts, uneven coloration, uneven saucing, etc.

Suggestions/Comments = Take more time putting the garnish in the box (not a judging factor, but would definitely help appearance), even up the rib tips/bones so that they are all on the same line.

I give this an 8, garnish looks very hap hazard in it's placement. Gaps between ribs, don't help make the meat attractive.

9 Looks great! I would recommend going a little lighter on the sauce, otherwise it is fantastic.

jaja01 KCBS MCBJ CTC

Score/Reasons = 6, ribs appear to be very dry, unevenly cooked with burnt areas and the sauce is not evenly applied.

Suggestions/Comments = Watch the cooking times and processes more closely to prevent areas of the ribs from being overdone and the ribs from drying out. Try to maintain a uniform color and sauce.

Frank KCBS MCBJ CTC
1/15/2014 01:34:36 am

Score/Reasons = 7. Heavy sauce on the meat detracts and the sauce is splashed around the box.

Suggestions/Comments = Neaten up that garnish.

8 Ribs really look good. Presentation just doesn't merit higher.

Glaze doesn't seem to have set properly, leaving sticky, gooey
surface.

Larry MCBJ

7 - Garnish covers meat, uneven cuts, sauce everywhere.

GregG KCBS/MCBJ
1/15/2014 01:52:32 am

7 - Sauced a bit too much, samples are even, color seems dark in places- could also be the photo. Product should be "ON" the garnish and not "IN" the garnish ie.. don't hide it.

Shawn Higgins

Score = 9

Clean, clear and crisp presentation. The pieces are uniform and color is great. I would love to see if this entry tastes as good as it looks.

8....Good color. Clean cuts. A little over sauced. Looks moist.

Set the ribs above the garnish. Take more care framing the meat.

Doug KCBS MCBJ & CTC

Score = 7 maybe 8. Ribs are uneven in size and the sauce looks sloppy on them. Also there is sauce on the box. Don't know if this was prior to or after turn in. If prior, make sure the box is spotless (attention to detail!), If after then I would disregard this.

Comments: The garnish looks very sloppy. If you are going to use garnish, make sure it compliments the meat and doesn't get in the way of the judges ability to see the meat from all angles. It just make it look like you threw everything into the box at the last minute and boxes like that will not score well in my opinion.

SCORE/REASONS: 8. Over-sauced

Jeff KCBS CBJ
1/15/2014 09:31:04 am

score / reason 8 looks a little heavy on the sauce, could be a little more uniform in size looks good

6 due to overall look of the box. Otherwise a possible 8 or 9

Messy/sauce on box and on garnish. Garnish looks uneven and thrown in box.

Doug KCBS CBJ/TC Cook

7, Very sloppy with sauce, ribs look dry or over cooked with sauce covering it up. I would like to taste to confirm tenderness

Matt KCBS CBJ
1/21/2014 12:17:13 pm

Score/Reasons = 7, crooked cuts, ribs aren't evenly sized, sauce is too heavy and shows brush marks. Looks like you picked a nice thick rack to cook, and the pullback is nice and uniform.

Suggestions/Comments = The garnish is a mess... take some time to pay attention to the details.

    Purpose

The purpose of BBQ Critic's JudgeMyBox section is to provide feedback to competition cooks. Certified BBQ Judges who visit this site will score the photo of a contest box (using KCBS judging rules) and may optionally leave a comment explaining their score.

The idea is to allow the cook to get inside the mind of a judge (judges do have varying opinions) so they can use this information to help improve scores on APPEARANCE.

In turn, the BBQ Critic editorial team will provide feedback on some judge scores and commentary  that stray from the KCBS rules. This will help our judges become better judges and keeps everyone on the same page. Judges may also encounter some fun challenges at times (click for example).

Comments about boxes or judges scores may be discussed in our online FORUM in a respectful manner.

Please be mindful that scoring photo boxes may not be as accurate as scoring the box in person. Lighting, glare, angles, etc may affect the overall score. Judges also have more time to stare at your box, so that means we may get very detailed about the good and the bad.

Have fun, judges! Oh, and cooks? Please send us your boxes. We love to judge Q here at BBQ Critic. ;-)
