7 appear burnt and dry

Bill F

8 Okay, that's brave, going without the garnish. I like that and it sure makes things easier for the judge. We're here to judge the meat not the green stuff. And I like the color and bark on those ribs. This might be a winner.

Jm H - CBJ SBN/KCBS
6/10/2013 03:14:43 pm

Score = 9; Good color on the outside, nice color on the meat underneath;

Suggestions/Comments: Take care in the placement so the ribs are uniformly visible in the box.

John - KCBS / MCBJ, CTC, Rep; MBN & MIM Judge

Score/Reasons: 7 - meat appears to be dry & unappealing.

Suggestions/Comments: At least spritz the meat to brighten its appearance. Also, please take better pictures for submmittal. All we can see is mounds of bark. That doesn't say enough for a proper appearance evaluation.

Pete KCBS

SCORE - 8 Totally unfazed by the lack of garnish. Hard to tell from the picture but I think these are single-bone wide cut ribs which is cool, something different from the typical KCBS contest rib. These look great.

Score - 7 - color very uneven, ribs slightly unorganized in appearance, several look a bit dry

Don

7 - ribs color to dark thus not appetizing, ribs do not look tasty, nice cuts

Jeff CBJ

7. Too dark. Not appetizing looking

Ike, CBJ/KCBS
6/10/2013 11:40:24 pm

7. Not much for presentation. Nice sized ribs but they look dry and could be tough. Box looks crowded.

Chaz D KCBS CBJ
6/11/2013 12:07:43 am

Score/Reasons: 7 These are pretty dark and tho the cuts appear pretty even the box looks pretty haphazard.

Suggestions: I know garnish is not mandatory but the biggest reason to use it is to stabilize the meat in the box. This box would have a tuff time getting to the judges table intact.

Larry MCBJ

7 maybe 6 in person - Looks dry and uneven cuts. Strangely, I can't see one bone...

Frank KCBS MCBJ CTC
6/11/2013 01:35:56 am

Score/Reasons = 9, may be lower in person. Difficult to judge from this angle. Double ribs are a nice change-up but more difficult to get the same size and color. Glaze is good without being heavy handed.

Suggestions/Comments = Take the picture from the judges' normal perspective.

score=6
this box needs a lot of help starting with meat selection, cooking technique and display preparation.

Lorne Rae
6/11/2013 01:41:16 am

an 8. An original layout, even color, look moist but one slab is wholly exposed while the remainder are partly covered. I like the view of the edges as it shows knife skills more clearly. Possibly just six pieces would have been better as then they all could be evenly placed.

Deb KCBS MCBJ/CTC
6/11/2013 02:27:16 am

Score: 8; meat appears very slightly dry, but overall looks like something I'd be anxious to take a bite of. Not over-sauced, good color. Nice "judge's cut".
Suggestions/Comments: The photo is not helping this team's cause- part of the shot is cut off so it's impossible to get a good look at the side of the ribs in front.

Score/Reasons = 6, the ribs really look dry and appear to be unevenly cut. It appears bone is visible on some of the ribs.

Suggestions/Comments = Maybe a little bit of moisture and less cooking time would make the ribs a little less dry appearing. Also, careful when cutting the ribs apart and try to avoid cutting along the bone of a rib.

Tom, CBJ PNWBA

6-7, Would go possibly higher or lower if could see the whole picture. Looks thrown in together. Bad picture.

Doug KCBS MCBJ & CTC

Score = 7, Ribs look a little too dark and also look dry.

Dan CBJ/KCBS
6/11/2013 04:01:16 am

Score=7

I like the color of the ribs and the sheen of the sauce which is modestly applied. The pieces are not arranged evenly in the box and they are not similarly cut. The photo would have been better if we could see the entire box. No garnish; no problem as stated in the rules. My biggest hangup is that the meat has not pulled back from the ends of the bones and the meat appears to be undercooked. Maybe the meat is fine, but their appearance suggest that they will be tough.

7 - Strange looking box. Ribs look dry and where are the rib bones?

Dick-MCBJ/CTC
6/11/2013 06:45:59 am

Score 7. Reasons: The ribs appear very dark and overcooked. This score is based on the partial poor picture and may do better if I could actually see the entry. Suggestion: If the cooks would review the pictures before they submit them I believe they would receive more accurate scores.

7..... uneven bbq sauce coverage and looks a little dry to me.

7, The meat looks dried out and over cooked.

8- Color is good, but is a little uneven. The ribs look moist. Very good looking rib box.

6 Ribs look dry and quite possibly tough. No appeal!

Matt KCBS CBJ
6/12/2013 01:09:10 am

8 - The meat looks nice, but the outside of the ribs looks a little overcooked.

Suggestion: Add the sauce a little later in the cooking process to keep it from caramelizing too much.

BlueSmoke KCBS CBJ/COMP COOK

7 at best....Dark color. Meat looks thin and dry. Boneless ribs? Burnt sauce.

Get a better glaze on the meat. Spitz before turning in for a shine and moisture.

Looks a little dry.

Suggestion: Play with the arrangement.

6/13/2013 01:36:10 am

Score/Reasons = 7, they are a bit too dark, the bark looks like it would be tough.

Suggestions/Comments = Some lettuce under the ribs may make them more appealing.

Looks dry, dark, and a 'lil crispy. I always try to find something good about each entry. Here's yours, nice cuts.
Average 6.

Score/Reason: I would score this box an 8. The ribs are a little dark in color.
Suggestion: You may want to give the ribs a little less time on the grill or slack on the sugar at the end.

Score/Reasons = 8 nice cut on the rib. needs sauce or moisture on the outside. look slightly overdone
Suggestions/Comments = good cut. judges like the double cut rib.

Jeff KCBS CBJ

    Purpose

The purpose of BBQ Critic's JudgeMyBox section is to provide feedback to competition cooks. Certified BBQ Judges who visit this site will score the photo of a contest box (using KCBS judging rules) and may optionally leave a comment explaining their score.

The idea is to allow the cook to get inside the mind of a judge (judges do have varying opinions) so they can use this information to help improve scores on APPEARANCE.

In turn, the BBQ Critic editorial team will provide feedback on some judge scores and commentary  that stray from the KCBS rules. This will help our judges become better judges and keeps everyone on the same page. Judges may also encounter some fun challenges at times (click for example).

Comments about boxes or judges scores may be discussed in our online FORUM in a respectful manner.

Please be mindful that scoring photo boxes may not be as accurate as scoring the box in person. Lighting, glare, angles, etc may affect the overall score. Judges also have more time to stare at your box, so that means we may get very detailed about the good and the bad.

Have fun, judges! Oh, and cooks? Please send us your boxes. We love to judge Q here at BBQ Critic. ;-)
