Score = 8

Nice box. Pieces look fairly uniform and moist. Nice glaze and color. Didn't see any shrinkage but that may be due to trimming the ends.

A little over sauced, don't have a clear view of all ribs.

I would score this box a 9.

Suggestion: Fill the box with more meat than green.

9 nice slab

Provided in person you can clearly see the slab
is cut into six or more pieces

9

Ribs look to be even in size and not too much sauce.

Jim H - CBJ SBN/KCBS

Score/Reasons = 8; nice looking ribs; sauce is a little uneven and appears gloppy; no pop!

Suggestions/comments = Try to spread/brush the sauce prior to submission to balance out the coagulation that happens to the sauce during the cook.

Frank KCBS MCBJ CTC
10/30/2013 01:41:31 am

Score/Reasons = 9. Nice looking ribs.

Suggestions/Comments = Garnish is a bit messy and covers part of one rib. Neaten up the garnish and set the meat on, not in the garnish. Watch the sauce drips on the garnish.

Score an 8. The ribs are evenly cut, not overly sauced. They are shiny and look good to eat. The angle in the box could be better.

9 - nice looking box of ribs. Good color, good arrangement, judicious use of sauce.

Suggestions/Comments: Be careful of the garnish berm at the top near the hinge. It's close to overpowering and unbalancing a nice presentation.

8 on the ribs themselves

If looking at the rest of the box, it would have scored lower. The garnish is a mess, not a even mixture of lettuce and parsley. Clean up the sauce in the box and on garnish.

GregG KCBS/MCBJ

8 - A pinch too much garnish. If you are going to use garnish, don't let it interfere with view of your product. Show these beauties off !

Thomas Paccioretti
10/30/2013 05:13:50 am

I'd score this an 8. I like the uniformity of the pieces, lacquer like finish, looks appetizing. I would deduct for the lack of attention to the garnish.

BBQ Critic
11/19/2013 01:22:09 pm

Tom - We NEVER "deduct for lack of attention to garnish" in a KCBS contest unless it is illegal garnish. Judge the meat only. But I am sure you already know that.

I see a lot of comments along this line in other posts because the meat is covered in some areas. However, in your commentary you do not mention the meat being covered and I am guessing that is what you meant. ;-)

Dick-MCBJ/CTC
10/30/2013 07:44:38 am

Score 8. The reason for this score is simply due to the ribs being hidden by the garnish. The cook needs to elevate the ribs. It is good that judges are taught not to judge the garnish or this box would score less. The off color parsley and the mix of lettuce and parsley would certainly hurt the score.

Score/Reasons = 8, nice color. Meat looks moist but a could be a bit heavy on the sauce.

Suggestions/Comments = More ribs in the box would make it look nicer.

Dennis McLemore CBJ KCBS

Score 9, Nice color, l like the layout appearance of a rack.

Suggestion > Less greens, they are covering the top portion of the ribs and making the ribs appear to be small.

Comments: The garnish is just barely covering up the ribs in the back. Make sure the garnish is not covering the meat so the judges can see it.

8 - Great color, look tender, juicy.

Not scoring the garnish, but it is distracting me from the meat which looks so good in terms of being from the same rack, but the garnish makes the box look like somebody grabbed some greens out of the lawnmower bag.

Score/Reasons = 9. Very nice looking box, but I came close to deducting a point because the garnish was covering the top portion of the ribs.

Suggestions/Comments:
Nice box, but there seems to be no reason to add that extra garnish at the top.

Score/Reasons = 8, The ribs are too red and not very natural looking. These ribs look like other ribs that have been submitted during contests.

Suggestions/Comments = Use sauce that is less red and more natural looking. Suggest making changes to make your ribs look distinctive from other's submitted during a contest.

A WORD ON THE GARNISH ISSUE:

I went back and pulled the comments on this box and there was not one comment from the live judge scores at Frostbuster on garnish covering the meat (a comment section is provided on the score card). The appearance scores had five 9's and one 8.

Therefore I believe it is the photo itself that makes it look like garnish is a problem. Since we cannot see this box from various angles, we are robbed from seeing all of the meat. I saw this box in person myself and did not see a garnish issue.

So in this case, we can blame the photo for not allowing us to see all the meat. ;-)

    Purpose

The purpose of BBQ Critic's JudgeMyBox section is to provide feedback to competition cooks. Certified BBQ Judges who visit this site will score the photo of a contest box (using KCBS judging rules) and may optionally leave a comment explaining their score.

The idea is to allow the cook to get inside the mind of a judge (judges do have varying opinions) so they can use this information to help improve scores on APPEARANCE.

In turn, the BBQ Critic editorial team will provide feedback on some judge scores and commentary  that stray from the KCBS rules. This will help our judges become better judges and keeps everyone on the same page. Judges may also encounter some fun challenges at times (click for example).

Comments about boxes or judges scores may be discussed in our online FORUM in a respectful manner.

Please be mindful that scoring photo boxes may not be as accurate as scoring the box in person. Lighting, glare, angles, etc may affect the overall score. Judges also have more time to stare at your box, so that means we may get very detailed about the good and the bad.

Have fun, judges! Oh, and cooks? Please send us your boxes. We love to judge Q here at BBQ Critic. ;-)
