Burnt

Then again, let's just change that to a 5. Looks really bad.

Am I still being too generous?

5 - sorry, looks like jerky. Over cooked for sure. Looks like it would be so tough. Remember, we eat with our eyes first. :)

CBJ Chef Derek.

I give that a 4 And I will tell you why.

Let's start with the meat.

1.It's over cooked by the pull back of the rib.

2.The trimming is horrible.

3.The sauce on the meat looks burnt.
The meat it self looks burnt.

4.The trimming looks really horrible as well.

5.The garnish looks "old" and not really done well.

My 2 cents.

Chef Derek, since you are a CBJ, you would know not to score a box on garnish!

And could it be because it's a real tight (closeup) shot with excellent lighting, which shows more detail than we are used to??? Just a thought. But the trimming is lacking.

I see a lot of problems with this, but I'll just go with this.

First, display the meaty end up, not the bone end. If the bone edn is in fact overcooked, it won't stand out so much.

Make a straight trim when you cuts the slab down. The angle doesn't od much for appearance.

You guys here to beat up on folks or help them out?

Whose ever box this is has posted it hoping to get help and you use terms like horrible and such. If you judge the same way that some of you are commenting, you ought to learn to put yourself in the cooks shoes when you do.

If the ribs were a little more uniform in the box, and maybe not quite so "dark" in spots the score would be higher. Maybe be a little smoother on the sauce. Also id like to say that after looking at your greens I would say NOTHING about them because ITS A MEAT contest! Im sorry but there sure are some "harsh" judges out there!

Overcooked? YES. The appearance of this meat looks BURNT, so I say it looks over-cooked.

I don't think judges are here to "beat up people." We are here to be truthful about appearance scores (we have no idea who or what team submitted the pic, so this isn't personal).

Sometimes the truth can be ugly. The cook understands this and will learn from both positive and negative comments. And why are judges commenting on other judges? Doesn't this violate the JudgeMyBox "Etiquette" policy?

Well, I guess I am now violating the policy, so I will shut up. ;-)

I would love to see a CBJ cook all night and half the day and make a box and put the meat in it. and it be a 9. the box has to look Relay bad this is a neat looking box yes the meat looks a bit over cooked but the over all is not bad.

I'd go with a 7, giving the pitmaster... the benefit of the doubt.

The "pullback" on the bones is something I like to see and do not score down for that. but, the surface of the bones and the surface of the top of the meat looks like some carbon buildup! Like they were cooked at a higher temp than usual? The funky angled cuts are not a positive, but not a big negative either. LOOKS like they might be a little overcooked--I'm intrigued, gimme a bite and we'll see how they taste!

OMG!!!..you guys! This is an appearance review here. You can neither pull test or taste a picture so lets be fair to the submitter. I honestly feel that the one who submitted this box should be given more credit than some have articilated here! With that said; My constructive "APPEARANCE" criticism on this box is...First, you cannot see the complete box to get a good view of the layout. Second, I love to see a good pullback on the bone, it gives me a good indicator of whats to come when I taste it. It does not reflect the rib being overcooked. Third, I love the color and the carmalization. I overlook brush marks unless they are sloppy. Fourth, not trimmed and uneven cut, needs improvement. and Fifth, even though you are only required to put 6 ribs in a box, if you would put more your box would look much better.
For judges consideration:....I always and it is a GBA requirement to attach a note to your score sheet giving constructive criticism back to the cook team.....Smokinwilly!

    Purpose

The purpose of BBQ Critic's JudgeMyBox section is to provide feedback to competition cooks. Certified BBQ Judges who visit this site will score the photo of a contest box (using KCBS judging rules) and may optionally leave a comment explaining their score.

The idea is to allow the cook to get inside the mind of a judge (judges do have varying opinions) so they can use this information to help improve scores on APPEARANCE.

In turn, the BBQ Critic editorial team will provide feedback on some judge scores and commentary  that stray from the KCBS rules. This will help our judges become better judges and keeps everyone on the same page. Judges may also encounter some fun challenges at times (click for example).

Comments about boxes or judges scores may be discussed in our online FORUM in a respectful manner.

Please be mindful that scoring photo boxes may not be as accurate as scoring the box in person. Lighting, glare, angles, etc may affect the overall score. Judges also have more time to stare at your box, so that means we may get very detailed about the good and the bad.

Have fun, judges! Oh, and cooks? Please send us your boxes. We love to judge Q here at BBQ Critic. ;-)
